R&D Specialist | Salt Lake City, UT
We are seeking an innovative and detail-oriented R&D Specialist – Bakery Innovation to support the development and commercialization of high-quality bakery products from concept through full-scale production. This role blends hands-on bakery expertise with food science knowledge to create and refine products that meet quality, operational, and regulatory standards. The R&D Specialist will collaborate closely with production and technical teams to drive innovation, improve product performance, and support continuous improvement within a fast-paced manufacturing environment.
Responsibilities
- Lead bakery product development projects from initial concept through pilot trials and full commercial launch
- Develop and optimize formulations for breads, laminated doughs, artisan items, and specialty bakery products
- Conduct laboratory testing, pilot trials, and production validations to ensure scalability and product consistency
- Troubleshoot production challenges and provide technical solutions to improve quality, texture, shelf life, and flavor
- Maintain accurate documentation of formulas, specifications, and trial results while supporting cost optimization initiatives
Qualifications
- Minimum of 5 years of experience in industrial bakery or dough manufacturing environments
- Strong understanding of dough systems, fermentation processes, and ingredient functionality
- Experience scaling bakery formulations from laboratory development to commercial production
- Knowledge of food safety and quality standards such as HACCP, GMP, and BRC
- Degree in Food Science, Bakery Science, or a related field, or diploma from a recognized baking program preferred
Pay
$30.00 per hour
Schedule
Full Time | Primarily Day Shift | Monday–Friday | 7:00am–4:30pm
- Shift flexibility during trials
- Some domestic and international travel required as needed
