What are the responsibilities and job description for the Viennoiserie Baker position at Michel's Bakery?
Our Bakery is seeking an experienced, dependable, and detail-oriented Viennoiserie Baker to join
our production team in Eagle-Vail, Colorado. The ideal candidate must have at least two years of
professional experience in a French pastry shop, artisan bakery, hotel, restaurant, or similar high-volume
environment and be capable of independently managing the production of laminated and fermented
pastries for both retail and wholesale customers.
Responsibilities include preparing detrempe and butter blocks; accurately scaling and mixing
ingredients; laminating, folding, resting, dividing, shaping, filling, proofing, applying egg wash, and
baking croissants, pain au chocolat, Danish pastries, brioche, and other viennoiserie; and carefully
controlling dough temperature, butter plasticity, fermentation, humidity, and proofing time to achieve
consistent layers, volume, color, texture, and internal honeycomb structure. The baker will operate
mixers, dough sheeters, proofers, refrigeration equipment, and ovens; adjust processes for changing
production and high-altitude conditions; evaluate finished products for flavor, appearance, structure,
and consistency; maintain production and inventory records; control waste; organize ingredients and
work areas; and follow strict food safety, sanitation, and cleanliness standards.
Candidates must be organized, precise, reliable, able to work efficiently under pressure, stand for
extended periods, lift up to 50 pounds, and be available for early-morning shifts, weekends, and
holidays as required. Strong knowledge of French viennoiserie, laminated yeasted doughs, temperature
management, fermentation, proofing, and commercial pastry equipment is required.

Pay: $20.00 - $28.00 per hour
