Responsibilities
- Prepare authentic Chinese and Taiwanese dishes from scratch, ensuring traditional flavors, techniques, and presentation standards are upheld.
- Execute a variety of cooking methods such as stir-frying, steaming, braising, and wok-based techniques with precision and consistency.
- Assemble and plate dishes to reflect cultural authenticity and customer specifications, maintaining a high level of visual appeal and uniformity.
- Maintain speed and accuracy in a fast-paced, high-volume kitchen environment while preserving quality and taste.
- Uphold strict food safety, sanitation, and HACCP standards throughout all stages of preparation, cooking, and plating.
- Fill in for other cooks as needed, demonstrating flexibility and teamwork to ensure smooth kitchen operations.
The Ideal Candidate should have
- Required: Proven Taiwanese/Chinese culinary experience.
- Culinary degree or professional cooking certification preferred.
- Minimum 2 years of experience in high-volume institutional catering or similar environment.
- Exceptional knife skills and proficiency in various cooking techniques.
- Ability to read, write, and understand English for recipe compliance and safety protocols.
- Physically capable of:
- Lifting and pushing 50 lbs
- Standing, bending, and moving intermittently during 8 hour shifts
- Flexible and adaptable to changing priorities in a dynamic kitchen setting.
- Strong organizational skills and attention to detail.
- Comprehensive understanding of food safety regulations and HACCP compliance.
Environmental requirements
