Sommelier / Floor Manager
Overview
The Sommelier / Floor Manager at Lilli is responsible for leading the dining room during service while helping develop and manage the restaurant’s wine and beverage program. This is a hands-on leadership role for someone who understands that great wine service begins with great hospitality.
You will work closely with the General Manager, Chef, and dining room team to create a seamless guest experience, from guiding guests through wine selections to maintaining the standards, organization, and energy of the dining room.
Responsibilities
Floor Leadership & Service
- Lead and actively participate in nightly dining room service
- Support the General Manager with daily restaurant operations
- Maintain Lilli’s service standards throughout each shift
- Lead the dining room with confidence, professionalism, and a strong hospitality presence
- Support opening and closing procedures
- Assist with pre-shift meetings and daily team communication
- Monitor the flow of service and proactively address guest and team needs
- Help create a dining room culture built around hospitality, professionalism, and teamwork
Wine & Beverage Program
- Manage wine service throughout the dining room
- Guide guests through wine selections and food pairings in an approachable and knowledgeable manner
- Help develop and maintain Lilli’s wine program
- Develop wine pairings for chef’s tasting menus
- Manage wine purchasing, receiving, organization, and inventory
- Maintain proper wine storage and cellar organization
- Monitor beverage cost, pricing, and profitability
- Build and maintain relationships with distributors and winery representatives
- Stay current with wine regions, producers, vintages, and industry trends
Team Education & Development
- Conduct ongoing wine and beverage education for the dining room team
- Educate staff on new wines, producers, regions, and pairings
- Help the team develop confidence in wine service and sales
- Lead by example during service and maintain composure in a high-pressure environment
- Work closely with the kitchen team to understand menu changes and communicate them effectively to the dining room
Guest Experience
- Provide knowledgeable, personalized wine recommendations based on each guest’s preferences
- Make wine approachable and engaging without being intimidating or overly technical
- Maintain a high level of attention to detail throughout the guest experience
- Handle guest concerns with professionalism and sound judgment
- Create memorable wine and dining experiences that reflect Lilli’s hospitality standards
Quality & Standards
- Maintain high standards for wine service, presentation, and storage
- Ensure proper handling and service of all wines and beverages
- Monitor inventory accuracy and organization
- Maintain consistency in beverage service and pricing
- Contribute ideas toward the continued development of Lilli’s beverage program

Qualifications
- Previous sommelier and/or restaurant management experience in a chef-driven or fine-dining restaurant
- Strong working knowledge of Old World and New World wines
- Particular strength in France, California, and other major wine regions preferred
- Experience with wine purchasing, inventory, and beverage cost management
- Strong floor presence and ability to lead during service
- Comfortable selling wine across a broad range of price points
- Ability to educate guests and team members without being intimidating or lecturing
- Strong communication, organizational, and leadership skills
- Hospitality-first approach to wine and restaurant management
- Sommelier or WSET certification welcomed but not required; experience, palate, and hospitality matter more than credentials alone

Schedule
- Full-time management position with a primary focus on dinner service
- Nights, weekends, and holidays will be required
