General Description
As the first interaction most guests have in the early hours, the Le Crocodile Breakfast Server must strike a balanced tone between efficient and hospitable yet serene service. Anticipating guest needs before they ask and greeting sleepy patrons ready to expedite coffee and food orders helps to make a seamless and memorable visit. Reading the room is essential, early morning guests may be rushing to catch an international flight, or settling in to conduct business and read the newspaper at their leisure. Striking the right tone with this varied guest list requires finesse and an intricate understanding of the speed of service. Le Crocodile Breakfast Servers set the tone for those who dine with us to have an amazing start to their day. This is a wonderful opportunity for someone with a strong fine-dining background no longer looking to work late nights.
Job Responsibilities / Essential Functions
- Greeting all guests warmly upon arrival and departure.
- Arrive at 6AM to set-up the dining room and bar to include; newspaper display, fresh juice batches, drip coffee and table/section detailing.
- Close attention to the demeanor of our guests, if they seem to be finished, if they require a manager, if they require water, if they require assistance with anything, if they are uncomfortable for some reason.
- Communication with the kitchen and Chef. Our breakfast team is crucial in the pacing of the Expeditor, constant feedback is necessary to ensure timing is correct with kitchen fires.
- Speak with hotel guests via phone to take room-service orders following SOPs with verbiage and appropriate quote times.
- Setting tables with clean napkins, polished silverware, and spotless glassware.
- Running food, knowing and articulating the proper drop lines for every dish. In-depth menu knowledge and allergy knowledge is expected.
- Floor knowledge, knowing table numbers and positions fluently.
- Side-work including but not limited to: polishing silverware and glassware, cutting bread, portioning butter, attending to the coffee and sauce station, sweeping, spot detailing.
- Stocking server stations, and the coffee station with doilies, printer paper, printer ink, sugar caddies, plates, coffee cups etc.
Position Skills & Requirements
- Ability to arrive ready and dressed for 6AM shift
- 1 year as NYC restaurant server or equivalent experience
- Barista experience highly regarded
- Fine-dining experience highly regarded
- Ability to study and memorize menu details to include cooking technique, allergens and drop-lines
- Solid understanding of early morning service including hotel guest protocols and VIPS
- Ability to multi-task
- Ability to stand for 8 hours
- Ability to lift up to 10 lbs
