JOB SUMMARY: The Executive Chef position is a key position in the Hotel. The position requires a high level of energy, enthusiasm, motivation, organization and leadership. A consistent display of quality of service in all areas of food production for menu items and specials in the designated outlets in accordance with standards and plating guide specifications. This position reports directly to the Director of Food & Beverage.ESSENTIAL DUTIES:Ensure all staff are properly trained and have the tools necessary to perform their job dutiesPromote safety awareness and practice safe work habits. Adheres to all guidelines and protocols set forth by OSHA, MSDS and Health Department Codes.Ensure that all menu items are prepared and presented according to established recipes and standardsDevelop menus, concepts and menu design for all food and/or bar outlets, guestroom amenities and catering eventsMonitor competitors and keep up to date on industry trendsMaintain updated and accurate costing and documentation of all items prepared and sold in the food and beverage operationsManage labor costEstablish procedures and timeframes for conducting departmental inventory. Determine minimum and maximum stocks for all food, material and kitchen equipmentMaintain procedures to ensure the security and proper storage of food and beverage products, kitchen inventory and equipment, replenish supplies, inventory, uniforms, etc. in a timely manner, and minimize waste and pilferageEnsure all kitchen equipment, including but not limited to sinks, stoves, grills, hoods, coolers, freezers, etc., are in proper operational condition and are cleaned on a regular basis. Ensure that all kitchen areas and related storerooms are cleaned, mopped and properly stocked according to anticipated business volume and in accordance with sanitation and health department requirementsWork closely with Engineering Department immediately of any maintenance and repair needs and follow up to ensure completion.Promote teamwork through daily communication and coordination within the kitchen and stewarding departments and when dealing with fellow co-workers, managers and other departments within the hotelEnsure department is in compliance with all local and state laws requiring proper food sanitation, licenses and certificationsMay serve as Manager on Duty or perform other duties as assigned by management.QUALIFICATIONS AND REQUIREMENTSCompletion of a degree or certificate in culinary arts and 3-5 years as a chef, with at least one year in a supervisory capacity or equivalent combination of education and culinary/kitchen operations experienceExcellent communication and interpersonal skills to interact with guests, employees and third parties that reflects highly on the hotel the brand and the CompanyAbility to stand in one area while preparing, handling and cutting food for extensive periodAbility to carry or lift items weighing approximately 50 pounds, bend stoop and kneel, climb stairsAbility to utilize often problem solving, reasoning, organizational and training skillsStrong mathematical skills, including basic math, budgeting, profit/loss concepts, percentages and variancesAlcohol awareness certification and/or food service permit or valid manager food handler card as required by local or state government agenciesJOB TYPE: Full TimeBENEFITS: 401(k), Health Insurance, Dental Insurance, Vision Insurance, Employee Discount, Paid Time Off, Referral program.WORK LOCATION: In personThe annual salary range for this role is $115,000-$130,000 and is based on experience.The above statements are intended to be a general description.
