Assistant Head Sushi Chef
KELP Sushi Joint is looking for an Assistant Head Sushi Chef to work alongside our Head Sushi Chef and help lead the sushi bar day to day. This is a hands-on leadership role for an experienced sushi chef who takes pride in knife work, consistency, and running a clean, organized station — and who's ready to step up when the Head Chef is off.

What You'll Do
- Prepare sushi, sashimi, and specialty rolls to KELP's recipes and presentation standards
- Break down and portion fish; manage daily fish prep and quality checks
- Run the sushi bar during service in the Head Sushi Chef's absence
- Help train and mentor line sushi chefs and prep staff
- Support inventory counts and assist with seafood and dry goods ordering
- Maintain strict food safety and sanitation standards, including proper handling of raw fish, time/temperature controls, and station cleanliness
- Assist with prep lists, par levels, and station setup/breakdown
- Contribute ideas for specials and seasonal menu items
What We're Looking For
- 3 years of sushi experience, including at least 1 year in a lead or senior sushi chef role
- Strong knife skills and fish butchery fundamentals
- Solid working knowledge of food safety practices for raw seafood
- Current food handler certification, or ability to obtain promptly; Food Manager certification a plus
- Reliable, calm under pressure, and comfortable directing others during service
- Available nights and weekends
Schedule & Compensation
- Full-time, salaried — approximately 55-60 hours per week
- $60,000–$70,000 per year
