What are the responsibilities and job description for the Dacotah Dining Lead Line Cook position at JACKPOT JUNCTION CASINO HOTEL?
ESSENTIAL JOB FUNCTIONS
- Competently utilize all Dacotah Dining kitchen stations.
- Work any station and shift as needed.
- Assume a leadership role in the kitchen.
- Assist Chef de Cuisine as needed.
- Assume responsibility for all food produced by the kitchen.
- Assist with control of food and labor costs.
- Provide training and guidance to kitchen staff.
- Motivate kitchen staff and ensure that they are kept busy.
- Maintain cleanliness and sanitation of kitchen area.
- Perform other duties and responsibilities as assigned.
EXPERIENCE & QUALIFICATIONS
- Prior line cook experience at a full service restaurant preferred.
- Minimum of two years in a leadership role.
SKILLS, KNOWLEDGE & ATTRIBUTES
- Strong culinary, knife and cooking station skills.
- Strong leadership and communication skills.
- Strong organizational and teamwork skills.
- Knowledge of frying, sautéing, broiling, basting, baking, poaching and roasting.
- Knowledge of proper sanitization techniques.
- Able to produce consistently high-quality food products.
- Able to cook steaks to temperature.
- Self-motivated and dependable.
UNIVERSAL REQUIREMENTS
- Sensitivity to various cultures, including Native American cultures.
- Regular attendance and punctuality.
- Able and willing to work any changes in scheduled hours as required.
- Serve as a credit to Jackpot Junction Casino Hotel, and encourage others to do the same.
