Sushi Chef / Sushi Helper (Experienced)Position Summary
We are seeking an experienced Sushi Chef / Sushi Helper to join our kitchen team. This role supports sushi bar operations by preparing high-quality sushi, maintaining cleanliness and food safety standards, and working efficiently in a fast-paced environment. Candidates should have prior sushi experience and a strong understanding of basic Japanese cuisine practices.
Key Responsibilities
- Prepare sushi, rolls, sashimi, nigiri, and related items according to restaurant standards
- Assist head sushi chefs with prep, plating, and service execution
- Properly handle, store, and rotate fish and ingredients (FIFO)
- Maintain a clean, organized, and sanitary sushi bar and prep area
- Follow food safety, health department, and sanitation guidelines
- Accurately portion ingredients to support food cost control
- Communicate effectively with kitchen and FOH staff during service
- Assist with prep work including rice, sauces, vegetables, and garnishes
- Break down and clean station at the end of each shift
Qualifications & Experience
- Previous sushi experience required (sushi helper or sushi chef role)
- Knowledge of sushi knives, fish handling, and rice preparation
- Ability to work efficiently during busy service periods
- Strong attention to detail and presentation
- Team-oriented, reliable, and punctual
- Ability to stand for long periods and lift up to 40 lbs
- Food Handler Card (or ability to obtain quickly)
Preferred Skills
- Experience with high-volume sushi restaurants
- Familiarity with traditional and modern sushi rolls
- Basic understanding of Japanese cuisine and ingredients
- Knife skills and speed with consistency
