Honō Japanese BBQ is seeking a skilled Butcher / Meat Cutter to join our kitchen team. We specialize in premium Japanese BBQ (Yakiniku), serving high-quality beef, pork, chicken, and Wagyu. We are looking for someone who takes pride in precision, consistency, cleanliness, and minimizing waste.

Responsibilities
- Break down and portion beef, pork, chicken, and Wagyu according to restaurant specifications.
- Maintain consistent cut sizes for quality and portion control.
- Trim meat with minimal waste while maximizing yield.
- Marinate and prepare meats following Honō recipes and standards.
- Label, date, rotate, and store products using FIFO.
- Maintain a clean, organized, and sanitized butcher station.
- Safely operate knives, slicers, band saws, grinders, and other meat-processing equipment.
- Assist with inventory counts and communicate low stock to management.
- Follow all food safety, sanitation, and health department regulations.
- Support the kitchen team as needed during service.
Qualifications
- 2 years of butcher or meat-cutting experience preferred.
- Restaurant or Japanese BBQ experience is a plus.
- Knowledge of beef, pork, and poultry fabrication.
- Excellent knife skills.
- Ability to lift up to 60 lbs.
- Able to work in refrigerated environments for extended periods.
- Reliable, punctual, and detail-oriented.
- Food Handler Certification (or ability to obtain upon hire).
