The Role: We are seeking a powerhouse Lead Breakfast Chef / Kitchen Manager to own the back-of-house. You will be responsible for line execution, kitchen staff management, inventory control, and ensuring uncompromising consistency and hygiene. You will work directly with ownership to launch this flagship footprint.
What You’ll Do:
Execute the Line: Lead high-velocity breakfast, lunch, and weekend brunch lines with absolute precision.
Manage the Kitchen: Oversee food safety, prep schedules, ordering, and kitchen cleanliness (zero-tolerance for health code friction).
Farm-to-Table Integration: Dynamically utilize fresh ingredients harvested daily from our on-site micro-farm border.
Control Costs: Manage inventory and minimize waste to maintain a strict 25% food cost target.
What You Bring:
Dual-Line Experience: Strong background in high-volume American breakfast/diner concepts and/or experience with international formats (such as South Indian dosa spreading/fermentation or global street-food execution).
Leadership: Experience as a Kitchen Manager, Sous Chef, or Lead Line Cook ready to step up and build a team.
Discipline: Punctual, highly organized, and obsessed with consistency, kitchen hygiene, and operational efficiency.
