Summary: The Executive Sous Chef is responsible for overseeing all kitchen operations at our Sporting Clays Grille, ensuring high standards of food quality, presentation, and safety. This role involves managing kitchen staff, planning menus, controlling costs, and maintaining compliance with health and safety regulations. This position will report to the Operations Manager.
Key Responsibilities:
- Menu Development: Collaborate with Operations Manager to rotate the menu seasonally while keeping local favorites.
- Food Preparation & Quality Control: Ensure dishes meet established standards for taste, presentation, and consistency.
- Staff Management: Recruit, train, schedule, and supervise kitchen staff; foster a positive and efficient work environment.
- Inventory & Cost Control: Monitor stock levels, order supplies, and manage food costs to maintain profitability.
- Compliance: Enforce hygiene, sanitation, and safety standards in accordance with local regulations.
- Collaboration: Work closely with restaurant management, front-of-house staff, and suppliers to ensure smooth operations.
- Innovation: Introduce new culinary techniques and trends to keep offerings fresh and competitive.
Qualifications:
Skills & Qualifications
- Culinary degree or equivalent professional experience. (3 years of kitchen management a must)
- Banquet experience is a must.
- Proven experience as an Executive Sous Chef or similar leadership role.
- Excellent knowledge of food preparation, kitchen operations, and safety standards.
- Ability to manage budgets and control costs.
- Creativity and passion for culinary arts.
- Ability to function productively in a fast-paced environment.
- ServSafe certification is a plus but not required.
