What are the responsibilities and job description for the Cook / Kitchen Team Member / Line Cook / Prep Cook position at Hemingway's Underground?
Our kitchen is designed so every team member learns every station. Training begins with mastering our cold side before progressing to our hot line. We believe confidence comes from mastering the fundamentals first.
You'll be trained to:
- Master our cold-side station, including salads, charcuterie boards, appetizers, plating, and food presentation. This station also includes preparing select hot menu items using our convection ovens.
- Progress to our hot-side station, preparing menu items using convection ovens, induction burners, sauté pans, steam tables, and other professional kitchen equipment.
- Learn proper food preparation techniques, including washing, chopping, portioning, and recipe execution.
- Support the dish station and help maintain a smooth flow of service. Dishes are part of every kitchen team member's responsibilities. During higher-volume shifts, additional support is available, but everyone helps wherever the team needs it.
- Keep all workstations clean, stocked, and organized throughout the shift.
- Follow recipes, plating standards, food safety, and sanitation procedures.
- Work alongside a close-knit team to deliver a consistently great guest experience.
A note about our kitchen: We are a no-fryer kitchen. Our menu is built around fresh ingredients and a variety of cooking techniques.

Previous experience as a cook, line cook, prep cook, or in food service is a plus, but not required. We're happy to train someone with the right attitude and work ethic.
