Food Production Team Member (1st Shift)
Gramercy Bakery - Gluten-Free Snack Manufacturing (bars, cookies, granola)
Position Summary
Gramercy Bakery is a dedicated gluten-free snack manufacturing facility producing high-quality bars, cookies, and granola. We are seeking dependable and motivated Production Team Members to join our growing production team.
This role supports the full production process, including ingredient handling, mixing, forming, baking, and sanitation. Team members are cross-trained across multiple stations and have opportunities to grow into Operator and Lead roles.
Schedule
- Shift: 2nd Shift (Afternoon/Evening)
- Days: Monday-Friday
- Overtime: May be required based on production needs
Pay Range
- Starting Pay: $15–$17/hr (Entry-Level)
- Experienced: $18–$23/hr (based on skill level; food manufacturing experience)

Key Responsibilities
Production Team Members may be trained in multiple areas, including:
Production & Processing:
Weighing & Staging Ingredients
- Accurately weigh and stage ingredients according to batch sheets and recipes.
- Verify correct labels, allergen declarations, and lot codes before staging and use.
- Maintain a clean, organized, labeled staging area to support efficient flow.
Mixing
- Load ingredients into mixers in the correct sequence, timing, and temperature per formula and SOP.
- Monitor mix/dough consistency, texture, and temperature to meet product specifications; escalate out-of-spec conditions.
- Record batch data accurately and follow approved rework/hold procedures when applicable.
- Support line efficiency by maintaining consistent batch readiness and identifying constraints that impact throughput.
Forming / Extruding (FME, Vemag, Slab, or Sheeting Lines)
- Set up and operate forming/extrusion equipment to achieve target dimensions and specifications (length, diameter, weight, texture).
- Perform routine in-process quality checks; make minor adjustments within training and escalate when needed.
- Complete changeovers safely and efficiently according to SOPs, including line clearance and allergen controls.
- Minimize downtime by communicating issues early and coordinating with Leads/Maintenance to restore production quickly.
Baking / Oven Operation
- Set, monitor, and adjust oven parameters (temperature, bake time, airflow) to achieve target color, texture, and bake performance.
- Ensure correct rack loading and clear segregation of raw vs. baked product to prevent cross-contact or process errors.
- Verify bake results against quality standards; document checks and communicate issues immediately to the Lead/Supervisor.
Sheet Pan Loading / Unloading
- Load and unload trays/pans to maintain continuous line flow and prevent bottlenecks.
- Handle product carefully to prevent damage, contamination, or misalignment.
- Maintain pace with the team to meet line efficiency targets.
- Monitor sheet pan inventory and replenish to defined par levels; notify Lead when supplies are low.
- Inspect and maintain product alignment/spacing on pans to support consistent baking and quality.
Equipment Tear Down, Cleaning & Sanitation
- Safely disassemble, clean, and reassemble processing equipment as assigned, following lockout/tagout and safety requirements where applicable.
- Execute sanitation and allergen-cleaning SOPs precisely; complete required documentation.
- Maintain 5S standards (Sort, Set in Order, Shine, Standardize, Sustain) to keep work areas audit-ready and efficient.
Quality & Food Safety
- Follow all GMP, SQF, and food safety requirements
- Complete in-process checks and documentation as required
- Maintain strict allergen and gluten-free controls
- Report any quality or food safety concerns immediately
Sanitation & Organization
- Perform cleaning and sanitation of production equipment and work areas
- Support changeovers between products and line setups
- Maintain a clean, organized workspace following 5S standards
Systems & Documentation
Processing Team Members are required to use the Mar-Kov ERP system to ensure traceability, accuracy, and efficiency in all batching and inventory tasks:
- Scan ingredients during staging and batching.
- Print bulk labels as needed for mixed or staged ingredients.
- Adjust partial ingredient usage accurately within the system.
- Return unused ingredients to inventory through the system.
- Review and reference batch recipes electronically.
- Follow the Mar-Kov user interface step-by-step to complete batching procedures.

Required
- Ability to work in a fast-paced manufacturing environment

- Ability to lift up to 50 lbs and stand for extended periods
- Must comply with all food safety, hygiene, and personal protective equipment (PPE) standards.
- Must be able to read and follow written procedures and production documentation.
- For ongoing growth - basic computer literacy preferred (for MRP data entry and production logs).
- Must possess and maintain a valid Clark County Health Card issued by the Southern Nevada Health District as a condition of employment.
Preferred
- Experience in food production, packaging, or manufacturing
- Basic computer or scanning experience (ERP systems)
- Bilingual (English/Spanish) a plus
Physical Requirements
- Standing, bending, lifting, and repetitive motion throughout shift
- Working around food production equipment, heat, and moving machinery
- Use of required PPE (hairnets, gloves, etc.)
