Food Production (Packaging) Team Member (2nd Shift)

Gramercy Bakery - Gluten-Free Snack Manufacturing (bars, cookies, granola)

Position Summary

Gramercy Bakery is a dedicated gluten-free snack manufacturing facility producing high-quality bars, cookies, and granola. We are seeking dependable and motivated Production Team Members to join our growing production team.

This role supports the full packaging process, including machine feeding, bag sealing, cartoning, case packing, palletizing, and sanitation. Team members are cross-trained across multiple packaging stations and have clear opportunities to grow into Machine Operator and Lead roles.

Schedule

  • Shift: 2nd Shift (Afternoon / Evening)
  • Days: Monday-Friday
  • Overtime: May be required based on production needs

Pay Range

  • Starting Pay: $15–$17/hr (Entry-Level)
  • Experienced: $18–$26/hr (based on skill level; food manufacturing experience)
  • Growth opportunities with wage progression

Key Responsibilities

Packaging Team Members may be trained in and asked to perform any of the following roles based on line needs, cross-training progress, and daily production requirements.

Production & ProcessingPalletizer

  • Build pallets following approved tie/high patterns and labeling requirements.
  • Verify pallet quantities, lot codes, and pallet tags for accuracy.
  • Run filled shippers through a taping machine and ensure proper seal.
  • Monitor code and print quality on shippers; verify correct date and lot information.
  • Record time of each completed pallet and remove to the warehouse.
  • Stage empty pallets and shippers in the packaging area prior to production and as needed.
  • Keep the end-of-line area organized and free from debris or trip hazards.

Casing

  • Pack bags of finished product into cases, confirming correct count for each product type.
  • Check the date coding list for the correct date on each product run.
  • Visually inspect product for defects, lot code accuracy, and correct product identity.
  • Assemble and set up cases during downtime in preparation for the next run.
  • Check product labels; notify Lead or Supervisor if incorrect packaging or mislabeling is observed.
  • Assist in clearing bagging jam-ups and support line flow.

Cartoning

  • Assemble and load finished products into cartons according to pack-out specifications.
  • Confirm correct counts, date codes, labels, and lot numbers on all packaging materials.
  • Verify packaging integrity, seal quality, and print accuracy during production.
  • Assist with setup and operation of taping machines, coders, and labelers.
  • Maintain production pace while ensuring accuracy and product quality.

Flow Wrap Feeder

  • Consistently and accurately feed product into the flow wrapper infeed at the correct rate and orientation.
  • Monitor product spacing and alignment to prevent jams or seal failures.
  • Communicate machine issues, film problems, or misfeeds to the PMO or Lead immediately.
  • Assist with film roll changes and line startups.
  • Maintain pace with line speed and support overall packaging flow.

FT Cutter

  • Operate the FT (film/tray) cutter safely and accurately per SOP.
  • Monitor cut quality, product alignment, and output consistency.
  • Perform visual checks on cut product for defects or out-of-spec dimensions.
  • Notify Lead or PMO of equipment issues, jams, or quality concerns.
  • Support changeovers by cleaning and preparing the cutter station.

Pouching

  • Feed product into pouching equipment accurately and at the correct rate.
  • Monitor seal integrity, fill weight, and pouch appearance.
  • Manually close or rotate bags when running gazette bag products.
  • Notify Lead of seal problems or bag defects immediately.
  • Use color-coded buckets per GMP policy.
  • Assist with cleanup and changeover at the pouching station.

Flow Wrapper PMO (FW PMO)

The FW PMO is a skilled operator role with higher responsibility and pay. Team members may be hired into this role with experience or promoted from the Team Member tier.

  • Program and operate flow wrapper equipment to achieve target bag dimensions, seal quality, and output rate.
  • Perform daily pre-production tear down, span calibration, and weight verification (beginning, middle, and end of each product run).
  • Adjust flow wrapper settings as necessary to ensure proper seals and print quality.
  • Troubleshoot machine issues and seal failures; notify Supervisor of issues beyond scope.
  • Set up, calibrate, and test the metal detector per SOP; record results.
  • Program and verify the case coder; monitor print quality throughout the shift.
  • Perform clean-out procedures on every product changeover and direct team for efficient equipment cleaning.
  • Direct packaging room employees for break/lunch relief and assist as needed.
  • Coordinate with the Supervisor on line speed and end-of-day production cutoff.

Pre-Made Bagger PMO

The Paxiom PMO operates automated cartoning/pouch equipment. This is a skilled operator role with higher responsibility and pay.

  • Set up, program, and operate Paxiom packaging equipment per SOP and production schedule.
  • Perform pre-run checks including calibration, weight verification, and seal integrity testing.
  • Monitor equipment throughout the shift; adjust settings to maintain quality and output targets.
  • Troubleshoot jams, misfeeds, or seal failures; escalate mechanical issues to Lead or Maintenance.
  • Complete clean-out procedures during changeovers and verify allergen controls.
  • Record all required production data and equipment logs accurately.
  • Assist in directing packaging team members in the area during the run.

Packaging Lead

The Packaging Lead is a senior role requiring demonstrated expertise, reliability, and leadership. Leads are expected to excel in both Food Safety and OSHA safety leadership to qualify for the top of the pay range.

  • Direct and coordinate all packaging line activities for the assigned shift.
  • Assign team members to stations, manage rotations, and ensure proper coverage throughout the shift.
  • Verify x-ray and metal detector operation and documentation at shift start and throughout production.
  • Monitor product quality, packaging accuracy, and compliance with SQF/GMP requirements.
  • Lead or support product changeovers, ensuring proper allergen controls and equipment readiness.
  • Complete production documentation and reporting; communicate issues to the Supervisor.
  • Train new and cross-training team members; provide real-time coaching and feedback.
  • Maintain 5S standards across the packaging area and ensure end-of-shift cleanup is completed.
  • Serve as the first point of escalation for team members on quality, safety, or equipment issues.

Shared Responsibilities – All RolesQuality & Food Safety

Follow all GMP, SQF, and food safety requirements throughout the shift.

Conduct visual inspections for product defects, mislabeling, or packaging errors.

Notify the Lead or Supervisor of any non-conforming products or safety concerns immediately.

Maintain strict allergen segregation and gluten-free controls.

Operate all equipment safely and follow proper Lock-Out/Tag-Out (LOTO) procedures when applicable.

X-Ray / Metal Detector Support

Every packaged unit must pass through an x-ray or metal detector as a critical control point.

Ensure products are properly oriented, free of obstruction, and passed through the system without interference.

Report any alarms, product rejections, or conveyor stoppages to the Line Lead or Supervisor immediately.

Handle rejected products as directed – re-run through the detector or escalate for QA review.

Sanitation & Changeovers

Assist with changeovers by cleaning and preparing packaging equipment and surrounding work areas.

Follow allergen-cleaning procedures and verify equipment readiness before startup.

Maintain 5S standards (Sort, Set in Order, Shine, Standardize, Sustain) to keep work areas audit-ready.

Dispose of trash, scrap, and rejected product per company procedures.

Cross-Training & Development

Participate in structured cross-training to become proficient in multiple packaging roles.

Learn and follow SOPs for all assigned machines and processes.

Rotate across functions to understand the complete packaging process flow.

Demonstrate reliability, initiative, and teamwork to qualify for advancement opportunities.

Equipment Tear Down, Cleaning & Sanitation

Safely disassemble, clean, and reassemble processing equipment as assigned, following lockout/tagout and safety requirements where applicable.

Execute sanitation and allergen-cleaning SOPs precisely; complete required documentation.

Maintain 5S standards (Sort, Set in Order, Shine, Standardize, Sustain) to keep work areas audit-ready and efficient.

Systems & Documentation

Packaging Team Members are required to use the Mar-Kov ERP system to ensure traceability, accuracy, and efficiency in all batching and inventory tasks:

  • Scan materials during staging and packaging.
  • Print pallet and case labels as needed for cases and pallets
  • Adjust materials balance return
  • Return unused packaging to inventory through the system.
  • Review and reference packaging recipes electronically.
  • Follow the Mar-Kov user interface step-by-step to complete packaging procedures.

QualificationsFood Safety Commitment

  • For ongoing growth - basic computer literacy preferred (for MRP data entry and production logs).
  • Must possess and maintain a valid Clark County Health Card issued by the Southern Nevada Health District as a condition of employment.

Preferred

  • Experience in food production, packaging, or manufacturing
  • Basic computer or scanning experience (ERP systems)
  • Bilingual (English/Spanish) a plus

Physical Requirements

  • Standing, bending, lifting, and repetitive motion throughout shift
  • Working around food packaging equipment, heat, and moving machinery
  • Use of required PPE (hairnets, gloves, etc.)

Packaging Lead

Coordinates full packaging line operations, manages crew rotations, verifies x-ray/quality documentation, and supports Supervisor with reporting and compliance.

Production / Packaging Supervisor

Oversees team, production planning, and cross-department collaboration. ensures quality and efficiency targets are met, manages team development and cross-department collaboration.
