Schedule:
Monday through Friday, plus Saturdays and mandatory overtime when needed.
1st shift 5 am – Approximately 3:30 pm
Job Purpose
The Beef Navel Trimmer is responsible for skillfully trimming beef primals to company specifications using knives and trimming equipment. This position supports production by ensuring properly trimmed product for further processing while maintaining food safety, product quality, and a safe working environment.
Duties and Responsibilities
Trim and Cut
- Trim primal cuts of beef, removing excess fat, gristle, bone, cartilage, and defects according to company specifications and yield targets
- Follow product specifications and visual standards to ensure consistent product appearance and quality
Operate Equipment
- Safely use knives and other hand tools and operate trimming or cutting equipment as trained
- Maintain knives in good working condition, including safe sharpening, handling, and storage
Quality Control
- Inspect beef throughout the trimming process for quality, defects, and foreign material
- Ensure trimmed product meets company standards for weight, yield, appearance, and customer specifications
- Report any quality or specification issues to the lead, supervisor, or FSQA
Food Safety, Hygiene, and Safety
- Follow all food safety, HACCP, GMP, and sanitation procedures at all times
- Maintain a clean, organized, and sanitized work area, including tools and equipment
- Wear all required personal protective equipment (PPE), including approved slip-resistant, protective-toe footwear in line with company policy
- Follow all safety rules, including lockout/tagout procedures, and immediately report unsafe conditions, near misses, or injuries
Production and Throughput
- Work efficiently at production line speeds to meet daily output and yield goals
- Follow direction from leads and supervisors on line setup, product changeovers, and production priorities
Waste Management
- Properly dispose of trimmings, bones, and waste material in designated containers
- Help minimize waste and improve yields by trimming accurately and handling product properly
Other Duties
- Assist with basic equipment and work area clean-up at the end of shift or during changeovers
- Perform other related duties as assigned by the Manager or Supervisor

Qualifications
Minimum qualifications required to successfully perform the job include:
Education
- High school diploma or GED preferred, but not required
Experience and Knowledge
- Prior experience in meat, beef, or food processing required
- Beef trimming, butchery, or similar knife-work experience strongly preferred
- Demonstrated knife skills, including safe handling, trimming, and cutting techniques
- Basic understanding of beef cuts and trim levels is a plus
- Familiarity with food safety practices, HACCP, GMPs, and plant sanitation is preferred
Working Conditions
- Work performed primarily in a cold production environment, typically 35 to 40°F, for extended periods
- Regular exposure to raw beef, blood, and meat odors
- Work areas may be wet, damp, and noisy
- Required use of PPE, including hairnets, beard nets (if applicable), smocks, gloves, protective sleeves, and approved safety footwear with protective toe and slip resistance, in accordance with company policy
Physical Requirements
- Ability to stand and walk for long periods of time
- Ability to use hands, wrists, and arms for repetitive cutting, trimming, and reaching motions throughout the shift
- Ability to safely handle and use knives and other sharp tools for extended periods
- Ability to lift, push, pull, and carry product and equipment up to 50 lbs as needed
- Ability to bend, twist, and reach at various heights, including waist and shoulder level
- Ability to work safely in cold conditions and wear required PPE for the duration of the shift
