JOB SUMMARY: To prepare and deliver quality products based on Golden Krust Recipe and provide effective and efficient management of the kitchen.




RESPONSIBILITIES:


•    Prepare and oversee the preparation of all menu items in the kitchen to ensure the correct Golden Krust recipe is being used and quality products are being served and available on a timely manner.


•    Ensure proper opening and closing procedures are carried out.


•    Manage inventory levels to ensure adequate stock is available at all times.


•    Assist with ordering of stock.


•    Use PARS to make determination of what is necessary to be prepared daily and make the necessary arrangements to have them available.


•    Supervise Cook(s) and Porter(s) in relation to daily activities,


•    Ensure daily operations are conducted in accordance with established standard operating policies and procedures.




•    Conduct daily, weekly, and monthly inventory counts and balancing of stock to assist in reduction of food waste, and follow standard operating receiving and storage procedures.


•    Complete all inventory, safety, and par checklists accurately.


•    Proactively communicate any food items that are running low the Restaurant Manager for ordering.


•    Assist in maintaining a clean, sanitary environment.




•        Follow proper food handling guidelines and ensure that all the local Health Department policies and procedures are being met.




•    Follow established restaurant policies and procedures.




•    Train new and existing kitchen employees.




•    Any other duties that may be assigned.


 


EDUCATIONAL REQUIREMENTS AND EXPERIENCE


•    Certificate in Food and Nutrition or equivalent training in Culinary Arts is desirable.


•    Must be able to read, write, speak and understand English.


•    Strong knowledge of standard cooking methods, equipment, and industry best practices.


•    A current NYC Food Handler Permit/ServSafe Manager Certification


•    2 years minimum of prior experience in a full service kitchen




SKILLS REQUIREMENTS


•    Manages time effectively - understands and follows written and verbal directions explicitly and asks questions for clarity when necessary.


•    Ability to learn new recipes and new procedures rapidly.


•    Possesses strong mathematical skills


•    Ability to manage and supervise a team


•    Must be able to work standing for extended hours.


•    Must be able to move about in close quarters, handle heat and handle fast work pace for extended hours.


•    Must be able to remain calm and cool under pressure


•    Must be able to lift up to 50 lbs.




HYGIENE AND DEPORTMENT


•    Cover hair at all times.


•    Wear the proper uniform at all times


•    Ensure that nails are kept short and clean - no nail polish


•    Exhibit good hygiene at all times


•    Wear full shoes at all times - No slippers


•    Jewelry, except for a plain band, is prohibited.

This job is satisfactorily performed when:




•    Meals are of the highest quality and are readily available at all times


•    The kitchen and equipment are kept clean and sanitary at all times.


•    A high level of initiative, flexibility and dependability is displayed at all times


•    The job is performed with professionalism and integrity
