Overview
We are seeking a skilled and passionate Sushi Chef to join our culinary team. The ideal candidate will have a strong background in Japanese cuisine, exceptional knife skills, and a keen eye for presentation. This role involves preparing authentic sushi dishes in a fast-paced, fine dining environment, ensuring the highest standards of food quality and safety. The Sushi Chef will be responsible for menu execution, maintaining kitchen cleanliness, and delivering an outstanding dining experience for our guests.
Duties
- Prepare a variety of sushi and sashimi dishes according to established recipes and presentation standards
- Design and plan sushi menus that align with customer preferences and seasonal ingredients
- Ensure all food handling procedures meet food safety and sanitation regulations
- Maintain proper knife skills for precise slicing and preparation of seafood and other ingredients
- Assist in food preparation tasks such as cleaning, portioning, and organizing ingredients
- Collaborate with kitchen staff to ensure timely delivery of orders during service hours
- Monitor inventory levels of seafood, rice, nori, and other sushi ingredients, placing orders as needed
- Uphold cleanliness and organization of the sushi station to meet health department standards
- Contribute to a positive team environment by sharing culinary knowledge and supporting colleagues
Experience
- Proven experience as a Sushi Chef or in a similar role within a Japanese or fine dining restaurant environment
- Strong knowledge of food preparation, cooking techniques, and food safety protocols in the food industry
- Experience with menu planning, catering, and serving in a restaurant setting is highly desirable
- Demonstrated culinary experience with an emphasis on sushi making, knife skills, and food handling
- Background in dietary department or dietary aide work is a plus but not required
- Familiarity with kitchen operations, food service standards, and maintaining high-quality presentation standards
