About the position:
As a Brewer Operator at Full Sail Brewing Company, you will be an integral member of the Brew Team responsible for producing a diverse portfolio of high-quality beverages including beer, seltzer, kombucha, and ready-to-drink (RTD) products. This role is cross trained across brewing, blending, materials batching, sanitation, quality, and filtration operations.
You will execute daily and weekly production tasks safely, accurately, and in accordance with established Standard Operating Procedures (SOPs) while maintaining exceptional product quality and consistency. This role requires strong attention to detail, reliable execution, and a commitment to continuous improvement.
Responsibilities include:
Brewhouse Operations
-
Follow all brewery SOPs, GMPs, and workplace safety and food safety policies at all times.

Operate brewhouse systems and equipment to produce beer, kombucha, seltzer, and other RTD products according to schedule and quality specifications.

Follow daily and weekly tasks and close out work accurately in recordkeeping systems.

Progressively master brewhouse tasks including:
-
Milling and grain handling
-
Mashing, lautering, boiling, whirlpooling
-
Knockouts, grain-outs
-
Mixing, blending, flavoring
-
Heat exchanging and cleaning cycles
-
Ensure accurate data entry for batch records, yields, gravities, temperatures, and process logs.
Cellar Operations
-
Progressively master cellar processes including:
-
Fermenter CIP/scrub/sanitizing
-
Cell counts, gravity checks/adjustments, and yeast management
-
Fermentation monitoring, cooling, capping, and chilling
-
Dry hopping procedures and yeast disposal
-
Maintain strict adherence to sanitation and microbiological best practices.
Filtration and Conditioning
-
Learn and execute filtration using various media and filtration tools.
-
Operate conditioning processes to prepare products for packaging with repeatability and precision.

Troubleshoot and optimize filtration performance to achieve quality and efficiency targets.
BBT and Packaging Readiness
-
Prepare bright beer tanks (BBTs) including cleaning, sanitizing, CO2 management, carbing, and quality verification for packaging readiness.
Sanitation and Equipment Care

Clean and sanitize tanks, work areas, pumps, hoses, equipment, and brewing systems according to sanitation protocols.

Maintain a clean, organized, and audit-ready brewing environment.
Communication and Collaboration
-
Proactively communicate process updates, quality concerns, deviations, and equipment issues to team members and supervisors.

React with urgency and problem-solving mindset when unexpected issues arise.

Participate in continuous improvement around safety, quality, efficiency, and standard work.

Support other brewery shifts and cross-functional departments such as Packaging, Quality, and Supply Chain when needed.

Sanitize and maintain machinery, equipment, storage bins, tanks, workstations etc.

Support other Brewery shifts and departments as needed such as packaging or supply chain.

Perform other job duties as assigned.
Qualifications:
-
Must be at least 21 years of age.
-
1 – 3 years in beverage, food, or other like consumer packaged or processed goods production.

Brewing/filtration and/or fermentation experience a plus.

Ability to work successfully with a team.
-
Must have the ability to perform repetitive tasks quickly and with attention to detail.

Excellent communication skills.

Reliable and punctual.
Physical Requirements and Working Conditions

Fast paced and constantly changing work environment.

Subject to extreme temperatures.

Ability to ascend/descend stairs and ladders throughout shift.

Ability to stand/move for 10-12 hours per day.

Ability to lift up to 50 lbs.

Must wear Personal Protective Equipment (PPE) including, but not limited to, safety glasses, sturdy work boots, hair and beard net (if required per policy), earplugs, and bump caps.

Comfortable working in tight or enclosed spaces.
Schedule:
- Friday - Sunday, 6:00am - 6:30pm
- 12-hour shifts
- Overtime including holidays and weekends as needed.

Pay:
Hourly pay is based on relevant experience and skill level. Rates for this position range from $19.00 to $26.31 per hour, with starting pay aligned to prior beverage manufacturing or related experience. Premium pay is available for weekend, evening, and early morning hours as listed below. Opportunities for wage growth through cross-training and advancement.
Premium Pay:
Hours worked during the following windows will receive premium pay as follows:
- 5:00 p.m. - 1:00 a.m.: Earn an additional 10% per hour.
- 1:00 a.m. - 7:00 a.m.: Earn an additional 15% per hour.
- All hours on Saturday and Sunday: Earn an additional 15% per hour.
