Fiorella's Cucina in Burlington is hiring an Executive Chef to run our kitchen. This is a hands-on leadership role for a proven chef who cooks scratch Italian, leads people well, and knows the numbers behind a busy full-service restaurant.

The Executive Chef is one of the most important roles in our company. You'll report to the General Manager and own everything that happens in the kitchen: the food, the team, the standards and the results.

What you'll do

• Lead and develop the kitchen team. Hire, train, coach and hold people accountable. Set clear expectations, give honest feedback and make cooks better.
• Deliver great food every time. Own taste, quality, portioning, plating and consistency on every plate that leaves the line.
• Run a clean, safe, organized kitchen. Keep sanitation and food safety standards high, and the kitchen ready for every service.
• Manage the numbers. Control food cost, labor, waste and inventory. Place orders, build schedules and adjust fast when the numbers move.
• Work as one restaurant. Partner with the General Manager and front-of-house team to take care of every guest.
• Stay in the kitchen. Prep, work the line, expo and jump in on busy nights. You lead from the front.

What we're looking for

• Executive Chef or head chef experience. You've held this role, with this scope, before.
• Scratch Italian cooking. Or experience with a similar scratch-kitchen menu style.
• High-volume, full-service dinner experience. You've run a kitchen at our covers volume, not just fast-casual or banquets.
• Kitchen leadership and P&L ownership. You've led a team and been accountable for results. Multi-unit restaurant group experience is a plus.
• Real cost control. You know your food cost and labor targets and how you hit them week to week. Experience with inventory and cost systems like MarginEdge or R365 is a bonus.
• Food safety certification (ServSafe or equivalent) and a firm commitment to sanitation.
• Availability for evenings, weekends and holidays. This is a working kitchen, and we're upfront about the pace.
