About the Role
The Prep Cook (Preparador) plays a critical role in our scratch kitchen by keeping coolers stocked with fresh, properly prepared ingredients. You’ll work closely with the Cocinero (Cook), Kitchen Leads, and the Manager on Duty to ensure both the hot and cold lines are ready for service.
This role requires attention to detail, speed, organization, and a passion for making fresh, high-quality food — every batch, every day.
What You’ll Do
Accurately prepare all recipes according to Felipe’s standards
Taste and verify quality of everything you prepare
Complete daily prep lists in the correct order and batch sizes
Set up and stock cold lines with fresh product
Assist Cocineros in keeping the line stocked during service
Unload, rotate, and organize deliveries
Follow all safe food handling and knife safety procedures
Maintain a clean, organized prep kitchen and refrigerators
Assist with dishwashing, cleaning, and trash removal as needed
Properly care for kitchen equipment and report issues to the MOD
What We’re Looking For
Passion for cooking and working with fresh ingredients
Ability to follow recipes, measurements, and procedures precisely
Strong attention to detail and food quality
Ability to work quickly and accurately in a fast-paced kitchen
