The Baker supports the daily production of breads, pastries, and baked goods for Faena Miami Beach’s acclaimed restaurants, in-room dining, banquets, and special events. Working under the direction of the Executive Pastry Chef, the Baker ensures all items are crafted with precision, artistry, and consistency — reflecting Faena’s Forbes Five-Star culinary standards and commitment to creativity.
Since Faena Hotel Miami Beach does not have an in-house bakery , this role requires strong organization, adaptability, and the ability to coordinate production efficiently within the main kitchen and pastry workspace. The Baker is responsible for preparing a variety of fresh products daily while upholding Faena’s brand promise of exceptional quality and elegance in every detail.

Production & Preparation

Production & Preparation
- Prepares and bakes a variety of breads, pastries, doughs, and viennoiseries according to Faena standards and Executive Pastry Chef direction.
- Ensures proper proofing, baking, and finishing techniques for consistent quality and texture.
- Executes daily production lists to meet needs of restaurants, banquets, and in-room dining.
- Adapts baking schedules and methods to align with limited space and shared kitchen resources.
- Labels, date, and store baked goods following HACCP and sanitation guidelines.
- Ensures freshness and visual appeal of all baked items served to guests.
- Maintains strict adherence to food safety, hygiene, and sanitation protocols.
- Inspects ingredients and finished products for quality, consistency, and presentation.
- Operates ovens, mixers, proofers, and other equipment safely and responsibly.
- Maintains a clean, organized, and efficient workstation throughout production.
- Monitors product inventory and communicate shortages or quality issues promptly.
- Works closely with the Pastry team and Culinary leadership to meet daily production goals.
- Supports the preparation of plated desserts, wedding cakes, and specialty items as needed.
- Assists with tastings, events, and seasonal menu changes.
- Collaborates with Purchasing and Receiving to ensure timely and accurate delivery of bakery supplies and ingredients.
- Minimum 2 years of professional baking experience in a luxury hotel or fine-dining environment.
- Formal pastry or baking education preferred.
- Strong knowledge of classic and contemporary baking techniques.
- Ability to work efficiently in a high-volume, multi-outlet operation without a dedicated bakery.
- Excellent time management, organization, and attention to detail.
- ServSafe or Food Handler certification required.
- Flexible availability, including weekends and holidays.
- Work schedule may vary based on business needs. Candidates must be flexible and willing to work primarily overnight shifts to support operational requirements.
