Position Overview: As a Sushi Chef at Edgewood Country Club, you will be responsible for delivering exceptional, high-quality sushi and cold-kitchen offerings to our members and guests. This role works closely with the Executive Chefs and Sous Chefs to ensure consistency, creativity, and excellence in sushi preparation and presentation. When sushi service is not scheduled, this position will also support Garde Manger operations, assisting with cold kitchen preparation and service needs.
Pay Range: $ per hour
*Prior experience in country clubs or high-end restaurant environment is strongly preferred. Weekend and holiday availability is required.
As the Sushi Chef at Edgewood Country Club, you will be responsible for:
- Prepare and execute sushi, sashimi, rolls, nigiri, and specialty items to Edgewood Country Club standards
- Maintain precise knife skills and sushi techniques, including rice preparation and fish breakdown
- Follow standardized recipes and plating guidelines to ensure consistency and presentation excellence
- Monitor freshness, quality, and temperature control of all sushi-related products
- Assist with sushi menu execution for regular service and special events
- Preparing cold kitchen food, dressings, platters, presentations and other items required for line and special function purposes
- Following all kitchen preparation and closing procedures meticulously to ensure efficient operation and maintain cleanliness standards
- Ensuring daily wrapping, dating and replenishment of all food items stored in designated areas
- Assisting with produce inventory, rotating produce and utilizing surplus food within platters to reduce waste
- Using food preparation equipment according to manufacturers' instructions
- Maintaining cleanliness of the work station and kitchen equipment
- Ensuring compliance with all local health codes and HACCP procedures, maintaining proper organization, temperatures and cleanliness standards
- Assisting with the preparation of other food products on the serving line as needed
- Attending kitchen staff meetings and actively contribute to discussions
- Completing other related tasks as assigned

- Have a high school diploma or equivalent (experience can be substituted)
- Experienced (required minimum of three years) in sushi preparation and/or cold kitchen operations
- Established in maintaining professional standards of conduct and appearance
- Certified in food safety (preferred)
- Have the ability to work effectively within a team environment
- Flexible with working weekends and holidays
- Knowledgeable and consistently follows food safety practices; able to perform during emergency situations
- Comfortable working in hot, humid and/or noisy environment
- Capable of standing, walking, climbing, stooping, kneeling, bending and/or reaching for long periods of time; can push, pull or lift up to 50 pounds
