Ice Cream Maker
The Ice Cream Maker is responsible for the exceptional creation of all ice cream products produced by the company; Production Team members must be friendly and able to interact well with customers and staff on a day-to-day basis.
This position reports to the Production Manager and is responsible to prepare, and manufacture ice cream mixes used in the production of ice cream products manufactured under the Doc Burnstein’s Ice Cream Lab label. Practices Good Manufacturing Practices (GMP), Good Sanitation Practices (GSP) and safe performance of duties as assigned by the Production Manager.
Responsibilities include:
- Observe and listen to equipment to detect possible malfunctions, such as leaks or plugging, and report malfunctions or undesirable tastes to supervisors.
- Set up, operate, and tend to ice cream equipment that mixes and blends ingredients in the manufacturing of ice cream products, according to formulas or recipes.
- Select and measure or weigh ingredients, using English or metric measures and balance scales.
- Follow recipes to produce ice cream products of specified flavor, texture, clarity, bouquet, or color.
- Record production and test data for each food product batch, such as the ingredients used, test results, and time cycle.
- Clean and sterilize machines and ice cream lab processing areas.
- Determine mixing sequences, based on knowledge of process effects and of the flavor of
specific ingredients. Examine, feel, and taste product samples during production to evaluate quality, color, texture, and flavor, and document the results.
Give directions to other workers who are assisting in the ice cream making process.
- Manipulate products, by hand or using machines, to mix ice cream product.
- Inspect vats after cleaning to ensure that fermentable residue has been removed.
- Inspect and pack the final product.
- Modify ice cream operations based on the results of sampling processes, adjusting time cycles and ingredients to achieve desired qualities, such as firmness or texture.
- Formulate or modify recipes for specific kinds of ice cream products.
- Openly communicates with Management and Production Team on all ice cream production issues.
All the customary duties and responsibilities of the position are expected to be performed.
