Pit Master - Dickey's Barbecue pit

Job Summary
We are seeking enthusiastic and dedicated Pit Master aster s to join our team in a fast-paced quick service environment.

A BBQ pit master is responsible for preparing and cooking barbecue, including selecting and seasoning meats, managing smokers or grills to control temperature and cooking times, and ensuring food safety and quality. This role often includes creating signature recipes, coordinating with kitchen staff, and maintaining a clean and organized work area. Core responsibilities

• Meat preparation: Select, trim, and season a variety of meats to perfection.
• Cooking: Operate and manage smokers, grills, and other cooking equipment to cook meats to the desired doneness. This includes monitoring fire control and maintaining consistent temperatures over long periods.
• Food safety: Follow all food safety protocols to ensure the quality and safety of the food being prepared and served.
• Team coordination: Work with kitchen and service staff to coordinate meal timing and ensure smooth operations.
• Kitchen maintenance: Keep the pit and prep areas clean, organized, and safe.

Required skills and qualifications

• Cooking expertise: A strong understanding of different cooking techniques, particularly those used in smoking and grilling.
• Physical stamina: The ability to stand for long periods, work in hot environments, and lift heavy items (often up to 50-100 lbs).
• Time management: The ability to work efficiently in a fast-paced environment and manage multiple tasks simultaneously to meet production schedules.
• Attention to detail: Meticulous attention to detail for tasks such as seasoning meats, monitoring temperatures, and ensuring consistent quality.
• Problem-solving: The ability to think clearly under pressure and resolve issues as they arise.
• Communication: Clear communication skills to work effectively with other team members and, in some cases, customers.
• Food safety certification: A ServSafe or other food safety certification is often a plus.
