General Purpose:
Make cheese from raw milk
Job Duties and Responsibilities:
- Load milk into cook vats
- Add ingredients to make cheese to customer specifications
- Take vat samples and pH readings
- Record ingredient usages
- Record times, usages, and pH readings on Make Sheet
- Pump whey pre-draws to Separator operator
- Pump cheese and Whey to EFV operator
- Wash and Sanitize cook Vats

- Maintain safe working conditions for employees and compliance with all state and federal regulations regarding health and safety issues
- Dedicate effort to safety as we expect every employee to leave work in the same condition as they arrive
- Follow all DFA good manufacturing practices (GMP) and work in a manner consistent with all corporate regulatory, food safety, quality, and sanitation requirements
- Exhibit the values and ethics of Dairy Farmers of America through honesty, discretion, and sound judgment
- Adhere to all DFA Quality, Safety and GMP policies and procedures and report any nonconformity
- Attend required training, including but not limited to, Safety, GMP, Hazard Analysis and Critical Control Point (HACCP), and Safe Quality Foods (SQF)
Qualifications:
Minimum Requirements:
Education and Experience
- High School Diploma or GED required
- Ability to interpret safety rules, operating and maintenance instructions, procedure manuals and job safety analysis
- Basic computer skills
Knowledge, Skills and Abilities
- Ability to add, subtract, multiply and divide, using whole numbers, common fractions, and decimals
- Ability to compute rate, ratio, and percentage
- Perform work independently as required
- Perform necessary routine cleaning and preventative maintenance
- Knowledge in Excel
- Knowledge in RS view
- Knowledge in SAP
- Knowledge with machines, tools, equipment and Lock out Tag out
- Must be able to read, write and speak English
