CTZN is not simply a San Diego tapas bar; we are a culinary movement. We tell the stories of the Basque region, reimagined through a rebellious California West Coast spirit. We fuse the ancient traditions of the Basque Country—between Southwest France and Northern Spain—with local farm-to-table creativity. At CTZN, every guest is invited on a "Bidaia" (journey), an immersive sensory voyage through coastal flavors, mountain traditions, and artisanal craftsmanship. Our mission is to best represent the culture and respect the traditions of the Basque and to become a great dining destination, offering unique communal experiences through our signature Pintxos, wood-fired Paellas, and the traditional Porrón wine ritual.

2. POSITION SUMMARY

CTZN is seeking a passionate, high-energy Server. The Server is the primary storyteller of our brand and acts as a guide for each guest’s "Bidaia" (journey). You will be responsible for guiding guests through our Basque-inspired menu, delivering "Steps of Service" excellence, and fostering a vibrant, welcoming atmosphere. The ideal candidate possesses a deep passion for food and beverage, excels in a fast-paced communal dining environment, and has a natural talent for storytelling.

3. ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Guide the Journey: Introduce guests to our "Bidaia" menu, explaining the unique fusion of Basque classics with California farm-to-table flair.
  • The Rituals: Master and explain key CTZN rituals, including pitching the Porrón, presenting 5 Jotas Jamón Ibérico, and describing the perfect socarrat on our Paellas, and more.
  • Brand Storytelling: Act as a brand ambassador by educating guests on Basque culture, the "Bidaia" concept, and the specific origins of our ingredients (e.g., 5 Jotas Jamón Ibérico, Txakolina wine).
  • Elevated Hospitality: Provide superior service that feels personal, charming, and professional for a diverse range of guests, from food enthusiasts to large private event parties, ensuring an elevated yet approachable experience.
  • Menu Expertise: Maintain comprehensive knowledge of all menu items, including Pintxos, Charcuteria, Quesos, Raciones, and Paellas. Confidently explain the "socarrat" of our paellas and the flavor profiles of our Spanish sheep’s milk and goat’s milk cheeses.
  • Beverage Expertise & Service: Speak confidently about our Northern Spanish and French wine list, as well as our signature botanical cocktails, and execute technical beverage service including the traditional pouring of Txakolina and instruction/pitching of the Porrón wine pitcher experience.
  • Steps of Service: Adhere to the established CTZN Steps of Service, ensuring precise timing, table maintenance, and collaborative teamwork with Back Servers and the Bar Team.
  • Salesmanship: Utilize suggestive selling techniques to enhance the guest experience, focusing on our signature cocktail program, wine flights, Porrón experiences, and curated Jamón tastings.
  • Operational Integrity: Assist in opening and closing duties as outlined in the CTZN Server Checklists, ensuring the dining room maintains our specific lighting and atmosphere standards.
  • Safety & Compliance: Maintain a clean and organized work station and adhere to all food safety, sanitation, and alcohol service regulations.

4. QUALIFICATIONS AND REQUIREMENTS

  • Minimum of 3-4 years of experience, upscale-casual or fine dining environments.
  • Have knowledge of Spanish/French wines and Mediterranean cuisine is highly preferred.
  • Exceptional communication and interpersonal skills; ability to engage in storytelling while maintaining service efficiency.
  • Ability to thrive in a social, shareable-plate dining environment.
  • Must be available to work evenings and weekends.
  • Operating Hours: Wednesday–Sunday (5:00 PM – 10:00 PM)
  • Valid Food Handler and Alcohol Service certifications (Lead/TIPS) as required by local and state law.

5. PHYSICAL DEMANDS

  • Ability to stand and walk for extended periods (6–8 hours).
  • Ability to lift and carry trays, glassware, and equipment weighing up to 30 lbs.
  • Frequent bending, reaching, and stooping in a fast-paced environment.
