JOB DESCRIPTION
The Flex Pool Operator is a cross-trained production team member responsible for maintaining labor continuity and operational performance across multiple production lines. This role provides coverage for hourly bakers during PTO, absenteeism, and staffing gaps, and supports high-labor or complex production runs requiring additional manpower.
This position requires broad operational knowledge across multiple processes and strong adaptability in a fast-paced food manufacturing environment.
Essential Functions
Primary activities include but are not limited to:
- Promote and support a strong safety culture by following all safety requirements for the job assigned. Ensure you are wearing appropriate PPE for the area.
- Always practice compliance with GMP’s in all areas of the bakery.
- Verify quality standards including weight, appearance, texture, packaging integrity, and accurate labeling as assigned.
- Ensure HACCP compliance throughout shift as assigned.
- Always follow proper allergen control and sanitation practices.
- Provide direct production coverage for hourly bakers during PTO, call-offs, and temporary staffing shortages.
- Operate equipment across multiple process areas (e.g., mixing, make-up, proofing, baking, freezing, packaging) as required.
- Support production lines that require additional labor beyond standard staffing models.
- Effectively enter and provide explanation behind downtime codes for data accuracy to ensure proper root cause solutions and resource allocation.
- Quickly transition between production lines with minimal supervision.
- Other tasks assigned from supervisor as needed.
Knowledge, Skills, and Abilities
- Strong understanding of GMP’s, HACCP, SQF food safety standards.
- Ability to operate and troubleshoot information on assorted HMI’s throughout the manufacturing process.
- Ability to work in a fast-paced, high speed manufacturing environment.

The employee frequently is required to stand; walk; use hands to finger, handle or feel; and reach with hands and arms. The employee is occasionally required to sit; climb or balance; and stoop, kneel, crouch or crawl. The employee must be able to lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus. Temperatures in the bakery can range from -10 degrees and 110 degrees Fahrenheit. Primary job functions will range from 50 degrees to 85 degrees Fahrenheit. PPE will be provided as necessary for exposure to extreme environments.
Position Type/Expected Hours of Work
This is a full-time position, with a rotating 2-2-3 schedule, 6:00 AM - 6:00 PM OR 6:00 PM - 6:00 AM. This schedule may be altered or amended to reflect company needs an/or customer demand.
Education and Experience
- High school diploma or equivalent required.
- 2 years of experience in a manufacturing setting or 1 years in a food manufacturing setting preferred.
- Working knowledge with automated processing and packaging equipment required.
