What are the responsibilities and job description for the Line Cook position at Cordevalle, L.P.?
We are seeking a skilled Line Cook to join our team at CordeValle. As a Line Cook, you will be responsible for planning, prepping, setting up, and providing quality service in all areas of food production. This includes preparing menu items, line specials, and displays/presentations of appetizers, entrees, side dishes, sauces, stocks, and sandwiches in accordance with standards and plating guide specifications. Additionally, maintaining organization, cleanliness, and sanitation of work areas and equipment is essential.
**Responsibilities:**
- Maintain complete knowledge of and comply with all departmental policies, service procedures, and standards.
- Ensure that standards are maintained at a superior level on a daily basis.
- Strictly abide by state sanitation/health regulations and hotel requirements.
- Maintain complete knowledge of correct maintenance and use of equipment; use equipment and tools only as intended, properly and safely.
- Meet with Kitchen Supervisor to review assignments, anticipated business levels, changes, and other pertinent information.
- Complete opening duties, including setting up work station, inspecting cleanliness and working condition of tools and equipment, checking production schedule and pars, and starting prep work and production of items needed for the day.
- Select, clean, and prepare meat, seafood, and vegetables.
- Prepare amenity orders for Room Service according to specified requirements and hotel standards.
- Prepare and produce Sauté, Grill & Sauce menu items for designated F&B outlets.
- Inform Kitchen Supervisor of any shortages or excess items.
- Maintain proper storage procedures as specified by Health Department and hotel requirements.
- Minimize waste and maintain controls to attain forecasted food cost.
- Disinfect and sanitize cutting boards and worktables.
- Assist Stewards to ensure efficient clean-up process.
- Complete closing duties according to department standards, including returning food items to storage areas, wrapping, covering, labeling, and dating items, cleaning and organizing storage areas, and restocking items.
- Exhibit a friendly, helpful, and courteous manner when dealing with guests and fellow employees.
- Perform all other duties as required.
Previous experience in a similar role preferred.- Knowledge of food safety and sanitation regulations.
- Ability to work in a fast-paced environment while maintaining attention to detail.
- Strong communication and teamwork skills.
- Flexibility to work various shifts, including evenings, weekends, and holidays.
