Job Opportunity: Pastry Chef
We are seeking a creative and technically meticulous Pastry Chef to lead our dessert program. This role is for a professional who balances the rigorous science of baking with the artistry of fine dining plating.
The ideal candidate will be responsible for conceptualizing and executing a seasonal pastry menu that complements our ever changing menu and wine list, encompassing everything from artisanal breads and mignardises to elegant composed desserts.
Key Responsibilities
- Menu Development: Design and execute a sophisticated dessert menu that highlights seasonal ingredients and modern techniques (e.g., tempering, foaming, gels, and tuiles).
- Bread & Dough Program: Oversee the daily production of house-made breads, brioche, and laminated doughs to ensure peak freshness.
- Plating & Aesthetics: Maintain an exacting standard for dessert presentation, focusing on texture, temperature contrast, and visual balance.
- Production Management: Manage the pastry department’s mise en place, including ice creams, sorbets, garnishes, and chocolate work.
- Inventory & Costing: Monitor pastry inventory, minimize waste, and collaborate with the Executive Chef on ingredient sourcing and food cost goals.
Qualifications
- Experience: 3 years of pastry experience in a high-end restaurant or luxury hotel setting.
- Technical Mastery: Deep understanding of pastry chemistry, sugar work, chocolate tempering, and large-scale baking.
- Creativity: A strong aesthetic eye and a passion for flavor innovation.
- Organization: Exceptional time management skills, particularly in coordinating long-lead preparations (fermentation, curing, freezing) with daily service needs.
