Quality Control (QC) TechnicianRole PurposeThe Quality Control (QC) Technician ensures all day-to-day QC department operations run smoothly in compliance with established food safety, quality, and regulatory standards. This role performs routine monitoring, testing, verification, and documentation to ensure product safety, quality, and compliance.Key ResponsibilitiesQuality Monitoring & CompliancePerform all monitoring activities according to scheduled frequencies.Identify and document non-conformances; place affected product on hold following company hold procedures.Maintain accurate and up-to-date hold logs.Communicate quality issues and non-conforming products to supervisors, R&D, and management.Document process deviations and corrective actions; conduct investigations as required.Daily Quality ChecksConduct daily SSOP, GMP, pre-operational, and operational inspections.Perform CCP and Preventive Control (PC) checks.Conduct sanitation verification using ATP and Allersnap swabs and record results.Initiate and verify corrective actions when sanitation or quality standards are not met.Monthly & Periodic ActivitiesPerform internal audits as assigned.Conduct perimeter inspections and glass and brittle plastic audits.Support environmental monitoring and shelf-life testing programs.Laboratory Testing & AnalysisTest product samples for pH, Brix, water activity (Aw), salt, density, viscosity, color matching, and organoleptic evaluation.Release product batches based on quality results.Prepare, ship, and document samples for third-party laboratory testing.Pull, organize, maintain, and replenish retain and reference samples.Equipment Calibration & Lab OperationsEnsure proper calibration of laboratory equipment, including:pH metersThermometersRefractometersSalt metersAw metersScalesReport calibration non-conformances to management.Open and close the laboratory according to assigned shift.Maintain laboratory cleanliness, organization, and equipment functionality.Production & Packaging VerificationVerify production and packaging activities against job orders.Confirm accuracy of:Lot numbersUse-by datesLabelsNet weightsProduct specificationsPerform line clearance inspections.Documentation & RecordkeepingEnsure laboratory documentation and record retention requirements are met.Enter recipe and test data into the product testing system and file completed recipes.Review incoming Certificates of Analysis (COAs), labels, and process records.Complete required paperwork and communication for outside laboratory testing.Prerequisite & Quality ProgramsSupport and maintain ongoing prerequisite programs, including:Environmental MonitoringShelf-Life TestingSanitation Verification
