Quality Control Technician – Frozen Food Manufacturing

Location: Pittston PA
Department: Quality Assurance / Quality Control
Reports To: Quality Assurance Supervisor
Employment Type: Full-Time

Position Summary

The Quality Control Technician is responsible for ensuring the safety, quality, legality, and integrity of frozen food products throughout the manufacturing process. This position supports the production of frozen seafood, beef, pork, chicken, and prepared meal products by monitoring compliance with food safety programs, HACCP plans, regulatory requirements, customer specifications, and company policies.

The QC Technician performs routine inspections, product evaluations, process monitoring, and documentation review to ensure products meet all food safety and quality standards. This role serves as a key resource in maintaining compliance with FDA, USDA, FSMA, HACCP, GMP, and customer requirements.

Essential Duties and Responsibilities

Food Safety & HACCP Monitoring

  • Monitor and verify Critical Control Points (CCPs) and Preventive Controls as identified in HACCP and Food Safety Plans.
  • Conduct and document HACCP monitoring activities, including verification of critical limits and corrective actions.
  • Review production records to ensure compliance with established food safety programs.
  • Verify proper product temperatures during receiving, storage, processing, packaging, and shipping operations.
  • Monitor allergen control procedures, product changeovers, and label verification activities.
  • Conduct pre-operational inspections to verify sanitation effectiveness prior to production startup.
  • Monitor compliance with Good Manufacturing Practices (GMPs), personnel hygiene requirements, and food defense procedures.
  • Assist with investigations involving food safety incidents, customer complaints, product holds, and non-conforming materials.

Quality Assurance Activities

  • Perform routine inspections of raw materials, ingredients, packaging materials, work-in-process products, and finished goods.
  • Conduct product evaluations including:
  • Net weight verification
  • Product count verification
  • Packaging integrity inspections
  • Seal integrity checks
  • Label and code date verification
  • Sensory evaluations (appearance, color, odor, texture)
  • Foreign material inspections
  • Verify compliance with product specifications and customer requirements.
  • Monitor production lines for defects, process deviations, and quality concerns.
  • Place products on hold when quality or food safety concerns are identified.

Regulatory Compliance

  • Support compliance with:
  • FDA regulations
  • USDA requirements
  • FSMA Preventive Controls
  • HACCP programs
  • GMP requirements
  • Seafood HACCP regulations
  • Customer-specific food safety standards
  • Company policies and procedures
  • Maintain accurate and complete quality records required for regulatory, customer, and certification audits.
  • Assist during customer, regulatory, and third-party audits and inspections.

Verification and Monitoring Activities

  • Verify performance and functionality of:
  • Metal detectors
  • Check weighers
  • Thermometers
  • Scales
  • Conduct routine calibration verification activities.
  • Review production documentation for completeness and accuracy.
  • Monitor product traceability and lot coding requirements.

Environmental Monitoring & Sanitation

  • Collect environmental monitoring samples as required by company programs.
  • Conduct sanitation inspections and verify cleaning effectiveness.
  • Monitor compliance with sanitation standard operating procedures (SSOPs).
  • Report sanitation deficiencies and assist with corrective actions.
  • Verify proper handling and storage of cleaning chemicals and sanitation supplies.

Receiving & Storage Verification

  • Inspect incoming seafood, beef, pork, chicken, ingredients, and packaging materials.
  • Verify product temperatures upon receipt.
  • Evaluate incoming materials for signs of damage, contamination, or temperature abuse.
  • Monitor freezer, cooler, and warehouse storage conditions.
  • Verify compliance with stock rotation and inventory control procedures.

Documentation & Reporting

  • Complete all required quality records accurately and in a timely manner.
  • Prepare non-conformance reports and corrective action documentation.
  • Communicate quality concerns effectively to production and management teams.
  • Assist with trend analysis and continuous improvement initiatives.
  • Maintain confidentiality of company and customer information.

Qualifications

Required

  • High school diploma or GED.
  • Minimum one year of experience in food manufacturing, quality assurance, quality control, or food safety.
  • Working knowledge of GMPs and food safety principles.
  • Strong attention to detail and documentation skills.
  • Ability to work independently and make sound decisions regarding product quality.
  • Basic computer skills including Microsoft Office and electronic recordkeeping systems.

Preferred

  • Associate degree in Food Science, Biology, Microbiology, Quality Assurance, or related field.
  • HACCP Certification.
  • Seafood HACCP Training.
  • PCQI (Preventive Controls Qualified Individual) training.
  • Experience with frozen food manufacturing.
  • Experience working with seafood, beef, pork, poultry, or prepared meal products.
  • Experience with BRCGS, SQF, BAP, USDA, FDA, or GFSI-recognized food safety systems.

Physical Requirements

  • Ability to work in refrigerated and frozen environments.
  • Ability to stand, walk, bend, and climb stairs for extended periods.
  • Ability to lift up to 50 pounds occasionally.
  • Ability to wear required PPE including hairnets, face masks, beard nets, gloves, hearing protection, laboratory coats, and protective footwear.
  • Ability to perform inspections throughout production, warehouse, and freezer areas.

Work Environment

This position is performed primarily in a food manufacturing facility producing frozen seafood, beef, pork, chicken, and prepared meal products. Exposure to cold temperatures, moving machinery, wet conditions, food allergens, and industrial production equipment should be expected.
