due focacceria is a neighborhood eatery and focaccia bakery rooted in italian tradition—community, craft, and a shared table. we produce scratch-made focaccia, artisan breads, and café offerings daily for in-house service, catering, and a growing wholesale program.
we’re hiring an prep production manager/artisan baker to lead bread production, prep execution, and back-of-house systems. this is a hands-on role—on the bench daily, shaping, baking, preping, and leading by example.
Position Overview
this role owns end-to-end production: prep, dough, bake, and kitchen flow.
you will lead focaccia and bread production, manage prep operations, and support ordering and inventory—ensuring consistent execution across café, catering, and wholesale.
Responsibilities
- lead daily production of prep and dough team
- manage fermentation, scaling, proofing, and bake execution
- run oven cadence and daily bake flow
- work the bench daily (mixing, shaping, finishing)
- lead prep team execution (prep lists, readiness, flow)
- manage daily counts, pars, and production planning
- assist with ordering and inventory management
- control waste and support food cost targets
- ensure wholesale orders are accurate, labeled, and on time
- maintain product standards (structure, crumb, crust, cut, presentation)
- train and develop team on baking and prep systems
- maintain a clean, organized, inspection-ready kitchen
Qualifications
- 2–5 years artisan baking experience (bread-focused)
- strong understanding of fermentation and high-hydration doughs
- experience in a production or high-volume scratch kitchen
- experience leading a team in a kitchen or bakery setting
- familiarity with prep systems, ordering, and inventory
- organized, consistent, and detail-oriented
- hands-on leader with strong work ethic
