Carolina Meadows is looking for an experienced Dietary Cook to support our health center dining services!
This position is primarily responsible for preparing, cooking, and finishing meals, cleaning and delivering meals in the satellite kitchen to the Health Center residents on a daily basis. Additional responsibilities include adhering to all state and federal regulations, assisting residents with selection of food, etc and inventory maintenance. Will also perform other reasonably-related department functions as assigned by management.
This Full-Time position is generally scheduled 32-36 hours per week. With every other weekend availability required.
Dietary Duties
1. Ensures day to day dietary requirements meet standards of Dining Services and other authorities.
· Stocks, cleans and checks household kitchens; ensures all snacks are within expiration date and well organized, etc.
· Maintains sanitation in satellite kitchen; reports problems to Dietary Supervisor or Dining Services Director and nutrition care manager as needed.
· Ensures all assigned tasks are completed and comply with all state and federal health regulations.
· Assists the Nutritional Manager with menu count and production sheets by tallying and entering data into the meal tracking system as needed.
· Completes all cleaning and sanitation of place settings, silverware, floors and equipment according to the cleaning checklist. Signs off on all cleaning performed.
· Assists with record keeping reports, i.e. meal tallies, tray temperature reports, test trays, refrigerator temperature reports, etc. on a daily basis.
· Adheres to all state and federal health regulations; complies with all policies and procedures of Dining Services.
· Completes inventory of satellite kitchen supplies on a daily basis and notifies the Nutritional Care Manager of needs. Receives and stocks inventory as appropriate.
· Acts as trainer for new staff.
Preparation and Cooking Duties
2. Prepares and cooks food for residents in the Health Center; ensures all trays are accurate and meet nutritional needs of residents.
· Assures the highest quality for the food by maintaining proper food temperatures and serving with proper sanitary conditions.
· Cooks all meals and side items for breakfast, some items for lunch and dinner based on the standardized recipes and daily production sheet. Prepares garnishes for the plates and ensures food is consistent with residents’ list of nutritional needs.
· Cleans steam table after each meal period and ensures the proper sanitation of working areas.
· Assists with the supplemental snack for the nurse’s station, utilizing the resident list and prepares snacks according to resident dietary needs.
· Corrects shortages during meals with substitution of items of equal or greater nutritional value; reports substitution to Dietary Supervisor.
· Portions food items and beverages based on the dietary needs of each resident.
· Completes prep work in the satellite kitchen and restocks the coolers, freezers and carts for the next meal period.
· Stores leftovers in proper containers and labels with the correct date, time and use or next meal period. Places leftovers in freezer or refrigerator.
· Assist with set-up of special parties in the health center.
Pay: $19.00 - $21.00 per hour
