Guy Fieri's Foxwoods Kitchen + Bar - Kitchen Manager

Brief Description

As a Kitchen Manager, a typical day might include the following:

• Supporting the Chef de Cuisine and Sous Chefs to ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards
• Assisting with the preparation, portioning, and garnish foods in accordance with set recipes, cooking methods and portion sizes
• Monitoring and managing those that are preparing food on a daily basis; assigning daily tasks and coaching through task if needed
• Ensuring a sense of urgency from all team members at all times
• Assisting with cooking and carving meats, preparing dishes and sauces
• Assisting with the maintenance of stations in practicing good safety, sanitation and organizational skills; training team members to maintain stations and practice good safety, sanitation and organizational skills
• Ensuring quality and safety of food by performing standard and any additional sanitary measures including good personal hygiene, cleaning of surfaces and sweeping of floors, as well as proper covering and storage of food items according to standards and procedures
• Observing safety and security procedures, determining appropriate action beyond guidelines and reporting potentially unsafe conditions
• Checking and maintaining proper food holding and refrigeration temperature control points
• Other duties as assigned
  
  
  

Requirements

This job might be for you if you demonstrate the following abilities and meet the following qualifications:

• You have at least 4 years previous experience in a fast-paced bar/restaurant
• You present a neat and professional appearance
• You are able to work in a high volume/fast paced work environment
• You have understanding and knowledge to properly use and maintain all equipment in station
• You have the ability to work at efficient and consistent pace
• You are able to communicate effectively and accurately with co-workers.
• You are able to demonstrate teamwork with other staff members
• You have flexibility with schedule which includes nights, weekends and holidays
• You are able to work on your feet for extended periods of time
