About the Position
El Tiempo Cantina is seeking experienced Grill Cooks to join our opening team in Galveston's Historic Strand District. This is a fast-paced, high-volume kitchen where quality, consistency, and teamwork are essential.
Our grill is the heart of the kitchen. Grill cooks are responsible for preparing premium steaks, fajitas, chicken, seafood, and other grilled specialties over a traditional wood-burning mesquite grill while maintaining the highest standards of food quality, timing, and presentation.
This position is ideal for cooks who take pride in their craft and thrive in a busy, team-oriented environment.
Responsibilities
- Prepare and grill steaks, fajitas, chicken, seafood, vegetables, and other menu items to company standards.
- Operate and maintain a wood-burning mesquite grill.
- Manage fire, temperature, and cooking zones throughout service.
- Ensure accurate temperatures and proper doneness on every order.
- Coordinate with kitchen managers and line cooks to maintain efficient ticket times.
- Maintain an organized, clean, and fully stocked workstation.
- Follow all food safety and sanitation procedures.
- Rotate, label, and properly store products.
- Assist with daily prep and opening/closing duties.
- Maintain consistency during high-volume lunch and dinner service.
- Work efficiently while maintaining attention to detail.
Qualifications
- Minimum 2 years of grill experience in a high-volume restaurant preferred.
- Experience cooking steaks and other proteins to proper temperatures.
- Wood-fire or charcoal grilling experience is a plus.
- Ability to work quickly without sacrificing quality.
- Strong communication and teamwork skills.
- Reliable attendance and punctuality.
- Ability to stand for extended periods and lift up to 50 pounds.
- Weekend and holiday availability required.
