California Aseptic Beverages is seeking a Micro Lab Technician to work for our co-packing facility in Fontana, CA. The primary function of this position is to inspect raw materials and finished goods to assure compliance with regulatory and customer specifications. It is highly desirable that this person have a working knowledge of a Processing Technician. A processing technician is responsible for mixing, standardizing, and pasteurizing all juice and drink products blended per customer’s specifications. FIRST SHIFT (6:00 Am - 2:30 pm).
Duties, Functions, and Responsibilities:
- Oversee batch corrections and authorizes final approval in accordance with all given specifications.
- Monitor all production lines running to ensure that codes are correct, straws are affixed, and fills are in specification.
- Monitor all production lines running to ensure package integrity. Will do package tear downs, electrolyte testing, and dye checks to verify compliance.
- Monitor all production lines running to ensure product integrity.
- Will perform brix, acid, pH, vitamin C, turbidity, and sensory analysis on an ongoing basis.
- Will report any findings that are not in specification to the Quality Assurance Manager.
- Will initiate Holds when required.
- Perform microbiological analysis on final product, raw materials, treated water and environment. Will collect data and report findings to the Director of Quality Assurance.
- Inventory/restock all laboratory supplies, retains and teardowns in an orderly fashion.
- Mix reagents as needed.
- Oversees batch corrections and authorizes final approval in accordance with all given specifications.
- Plating samples (offline, 24 and 48 hour abused, end of shelf life, other).
- Proper documentation (paper or computer documents) and reporting of incoming samples and finished results.
- Read plates and other culture media and document the results.
- Report out of specifications to supervisors and managers.
- Collect samples (juice samples, swabs, aseptic, and other).
- Identify microorganisms by Gram stain and other media.
- Prepare media (agar, dilution blanks, etc).
- Clean/maintain the lab, incubators, and water baths appropriately for a microbiology lab.
- Other duties as may be assigned from time to time.
Knowledge, Skills, and Abilities:
- Knowledge of Good Manufacturing Practices.
- Strong administrative and organizational skills, with an emphasis on time management and the ability to plan, organize and implement various activities within a time-pressured environment.
- Ability to read, understand and follow detailed instructions that involve multiple steps and quality equipment
- Strong team player who is able to interface with a diverse workforce.
Minimum Qualifications:
- A High School diploma
- Associate’s or Bachelor’s degree in Microbiology, Biology, Food Science, or a related field preferred.
- Coursework in microbiology, chemistry, and laboratory techniques preferred.
- Minimum 1–2-year experience in a laboratory environment, with experience in titrations, microbiology and aseptic packaging.
- 2–4 years of lab experience in food manufacturing, beverage, or environmental testing preferred.
- Experience with aseptic technique, plating, incubation, and data recording preferred.
- Familiarity with ISO, HACCP, or SQF lab documentation standards.
- Must be able to communicate clearly in a noisy environment.
- Ability to learn and adapt quickly to changes..
