What are the responsibilities and job description for the Sushi Chef position at Caldera House?
We are looking for friendly, energetic, and highly motivated individuals who thrive in a team-oriented environment to join our team at the base of one of the best ski resorts in the world. The Sushi Chef works closely with the Head Sushi Chef preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish, and placing orders for supplies as needed.
The schedule for this position is Wednesday - Sunday.
Essential Job Functions
- Direct, train and supervise performance of all cooks
- Expertly cutting, slicing, and filleting different types of fish
- Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Head Sushi Chef when quality is sub-standard
- Manage food prep activities, liking boiling rice
- Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
- Maintaining a clean work environment to prevent food contamination
- Maintain complete knowledge of correct maintenance and use of equipment; use of equipment and tools, only as intended, safely and properly
- Ensure that scheduled staff has reported to work; document, and if necessary, discipline any late or absent team members
- Regularly taking inventory of food supplies and other products
- Reporting any problems with kitchen equipment to the manager on duty
- Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
- Communicating with wait staff to ensure that special requests and food allergy considerations are met
- Prepare and assign production and prep work for all cooks and inspect for completion
- Ensure completion of opening and closing duties
- Assist with food orders and inventory
- Prioritize all tasks and ensure they are completed in a correct and timely fashion
- Communicate additions and changes to daily kitchen assignements before or as they arise during shift
- Inform kitchen leadership and/or Front of House Management and service staff of any shortages or 86'd items affecting the restaurant menu(s)
- Conduct daily line up with all front and back of house team members
- Communicate all necessary information to ensure the highest quality items are reaching our guests
- Maintain proper storage of all products as specified by the Health Department and the Executive Chef
- Minimize waste and maintain controls in product utilization to attain forecasted food cost
- Perform other duties as directed, developed, or assigned
Qualifications:
- At least 2 years of experience in a Sushi Chef role required
- Availability to work during business hours, including weekends and evenings and stay through the entire operating season
- Knowledge of various sushi types and sushi-rolling techniques
- Sound knowledge of food safety regulations
- The ability to work fast-paced and under pressure
- The ability to stand for long periods of time
- Excellent time-management skills
- Exceptional customer service skills
- Certification from a culinary school is a plus
