JOB TITLE: Dietary / Technician - Full Time and Part Time
LOCATION: Nashville TN Detox Facility
SCHEDULE: 1st and 2ND Shift including weekends / holidays
SALARY: D.O.E.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
- Must have strong commercial kitchen experience, exceptional organizational skills, and the ability to manage food inventory sourced from donations and food trucks.
- Full kitchen management, from menu planning and meal preparation to ensuring safety, cleanliness, and order in a recovery-focused environment.
- Prepare, cook, and serve hot, balanced meals and staff using commercial-grade equipment.
- Creativity is essential for preparing nutritious, satisfying meals with limited ingredients
- Plans and coordinates standards and procedures of food storage, preparation, and service; equipment and department sanitation; and employee/client safety.
- Supervises the putting up of stock, using proper storage procedures, i.e., like items together, labels facing front, dating stock when necessary, etc.
- Supervises the cleaning of work area and sanitizing of work surfaces, mopping of floors, taking out trash, and completion of other assigned chores.
- Confers with Dietary Supervisor to ensure that menus and department policies conform to nutritional standards, government regulations, and internal procedures.
- Reviews individual client's special diet information/needs with Primary Counselor. Provides nutritious meals that meet the client's medical/physical needs. (This does not include personal preferences.)
- Inspects food, food preparation and storage areas. Ensures that hairnets and gloves are worn by food preparers in both the preparation and serving of the food.
- Adheres to diet manual, demonstrating accuracy in weighing, measuring and proportioning food.
- Completes weekly department checks, ensuring cleanliness of facility and reports any needed repairs or replacements.
- Is familiar with company policies and procedures, including safety standards and fire/disaster plans.
- Demonstrates the ability to lift 50 pounds and/or to assess the lift load in order to request assistance and stand for long periods.
- Provides high-quality food according to standardized recipes in a cost-effective manner.
- Plans cooking schedules to have food prepared on time, in order to serve hot.
- Monitors food for correct temperature prior to serving.
- Demonstrates understanding and working knowledge of proper techniques for food preparation, including modified diets.
- Implements diet changes; allows for late arrivals.
QUALIFICATIONS
- Experience and Knowledge with commercial, kitchen equipment
- Must be able to perform each essential duty satisfactorily
- Some computer skills. Ability to type 20 wpm.
- Able to communicate both verbally and in writing.
- Keeps a current CPR and First Aid certifications, required
- Pass Background Check and Drug Screen, required
- Valid TN D.L. with "F" endorsement required; "F" endorsement can be obtained once hire
EDUCATION and/or EXPERIENCE
- Minimum 2 years' experience, required, in a commercial or institutional kitchen (detox, hospital, or cafeteria preferred).
- Valid Food Handler's or ServSafe Certification, required
- Familiarity with modified diets and nutritional standards
- High School Diploma or GED
