CULINARY SUPERVISOR
Annual Pay, $65,000.00
Under the general direction of the Director of Food and Nutrition Services, will maintain & administer the production of meals to provide the best possible quality and nutritious meals with available financial resources. Directly supervises food-service associates in accordance with policies, procedures, applicable laws related to food & nutrition & CSDE Guidelines
Essential Duties and Responsibilities:
- Under the direction of the school lunch consultant, train new associates on proper production, service and safety of meal preparation in accordance of the CSDE guidelines.
- Supervises, prepares meals all catering, including delivery, paperwork, and marketing.
- Supervises all field trip orders, including delivery, requests & production records.
- Assist with recipe development using TITAN or similar recipe database, uses approved food recipes and production standards to ensure proper quality, serving temperatures and standard portion control.
- Responsible for specific ordering requirements
- Stores, labels, and dates food items according to policy; maintains established food rotations in storage to minimize spoilage and waste.
- Follows HACCP guidelines to ensure quality and safety of food supply.
- Operates food-service equipment in a safe manner and according to established policies and procedures.
- Assists with menu development.
- Performs other duties as assigned.
Requirements:
- Knowledge of principles and practices of food production and safety.
- Demonstrated knowledge of sound team leadership practices and management procedures.
- Demonstrated knowledge of state and federal laws and regulations which concern school meals.
- Servsafe certified.
- Experience in employee supervision.
- Demonstrated experience and best practices in the implementation of food production systems.
- Good communication and computer skills
Experience and training:
A minimum of five years’ experience in employment in positions including direct supervisory capacity in food services
