Job Summary
We are seeking a talented and experienced Production Bread Baker to oversee bread production in our culinary team. The ideal candidate will have extensive knowledge of artisan bread baking techniques, a passion for craftsmanship, and the ability to lead and mentor a small team. The Lead Bread Baker is responsible for producing high-quality, hand-crafted breads while maintaining consistency, efficiency, and adherence to food safety standards.
Key Responsibilities:
- Manage daily production of various breads including sourdough, baguettes, focaccia, rolls, and specialty loaves.
- Oversee all aspects of bread baking—from mixing and fermentation to shaping and baking.
- Maintain and manage sourdough starters and preferments with consistency and care.
- Monitor inventory and order supplies as needed to ensure efficient production.
- Train and supervise bakery staff, ensuring proper technique, timing, and consistency.
- Work closely with kitchen leadership to develop new bread offerings and seasonal specialties.
- Ensure cleanliness and organization of the bread station and baking area.
- Uphold food safety and sanitation protocols at all times.
Qualifications:
- Minimum 3–5 years of professional bread baking experience; leadership experience preferred.
- Strong understanding of fermentation, hydration, flour types, and baking science.
- Skilled in both hand shaping and use of commercial bakery equipment.
- Ability to work early mornings, weekends, and holidays as needed.
- Excellent leadership, communication, and organizational skills.
- Formal culinary or baking education is a plus but not required.
Physical Requirements:
- Ability to lift up to 50 lbs and stand for extended periods.
- Comfortable working in a hot, fast-paced environment.
