Full-Time Exempt Position 40-45 hours per week. Days and Times TBD.
Specific Responsibilities of the Commissary Manager
Planning
- Plan and oversee production schedules to meet demand across multiple retail locations and external accounts.
- With the GM, Director of Finance, and in consultation with managers, set sales, margin, labor, and inventory goals for Commissary departments.
- Track the financial performance of the commissary, monitor deviations from budget; communicate with the GM in a timely manner with forecasts, plans, and concerns regarding commissary operations and customer satisfaction.
- Approve capital expenditures for departments up to $1,000. Submit requests to the GM for expenditures that exceed that amount.
- Work with the Director of P&C to ensure timely and uniform implementation of personnel policies and practices by managers; consult with the Director of P&C prior to significant status or structural changes in your area of oversight.
Commissary Operations
- Ensure consistent product quality, recipe adherence, portioning, labeling, and packaging standards.
- Ensure that managers reach labor, margin, and sales goals.
- Ensure adequate staffing within established goals for service, production, and labor expense, and in response to anticipated sales levels and staffing changes in commissary departments.
- Set pricing guidelines as directed and maintain knowledge of pricing/margin systems.
- Ensure appropriate reporting is used at set intervals to monitor waste and production efficiency.
- Work with managers to improve and troubleshoot systems and procedures for efficiency, productivity, and quality.
- Work within departments as necessary, and demonstrate consistent, reliable attendance.
- Work with managers to develop efficient and effective standard operating and training procedures.
- Research, purchase, and ensure proper maintenance of commissary equipment.
- Maintain and ensure adherence to set ingredient guidelines for high-quality commissary products.
- Direct and participate in the research and development of new products and initiatives for the Commissary.
- Work with the Facilities Manager to ensure cleanliness, safety, and maintenance of the Commissary departments.
Business Development
- Develop relationships and processes to ensure internal customers, CWM and CDT, are satisfied with Commissary products and related processes.
- Collaborate on merchandising strategies that strengthen the customer experience in all locations.
- Develop and grow external sales channels such as wholesale, catering, or institutional accounts.
- Work with Marketing to identify new opportunities and develop product offerings for external customers.
- Coordinate production, pricing, packaging, and delivery requirements for external accounts.
- Maintain strong relationships with external partners to ensure service quality and ongoing business.
Other
- Oversee food service purchasing to ensure appropriate systems and consistency are maintained.
- Ensure appropriate use of recipe and cost maintenance software.
- Maintain proficiency with pertinent programs and software necessary for Co-op operations.
- Complete other duties as assigned.
- Three to five years of experience supervising and managing staff in a food service setting required
- Three to five years of experience managing kitchen and/or bakery production
- Commercial cooking experience required.
- Wholesale program development experience preferred.
- Project Management experience preferred.
- Fluency using MS Office required, particularly Word, Excel, and Outlook, with skills sufficient to communicate and develop and maintain documents with a high degree of accuracy.
- Demonstrated experience in the analysis of financial reports required.
- Ability to demonstrate regular, reliable attendance and work a flexible schedule to meet the needs of the business; some early mornings, evenings, holidays, and weekend shifts required.
- Ability to lift up to 30 lbs. throughout shift, occasionally 50 lbs.
- Ability to stand for long periods and to bend and twist repeatedly; ability to lift product overhead and/or to climb ladders with product.
- Ability to sit for long periods of time in front of a computer.
Salary : $70,000 - $80,000
