The Kitchen Support Staff is responsible for assisting Food Service Directors, who are overseeing and managing food production operations in a correctional facility kitchen.
The position requires standing, walking, and bending throughout the entire work day and the ability to lift, stack, and maneuver objects that may weigh 30 to 50 pounds. Kitchen Support will assist Food Service Directors in the following:
- Food Preparation & Production:
- Supervise the preparation and production of meals for inmates, ensuring they meet nutritional standards, portion sizes, and facility guidelines.
- Ensure that all meals are prepared, cooked, and served in accordance with established menus and dietary requirements.
- Staff Management:
- Supervise, train, and evaluate food service staff, including cooks, kitchen aides, and other food production workers.
- Assign tasks to staff based on skills, experience, and facility needs.
- Ensure staff adheres to safety and sanitation protocols while working in the kitchen.
- Inventory Control:
- Monitor inventory levels of food and kitchen supplies, ensuring appropriate stock levels and ordering supplies as necessary.
- Maintain accurate records of food purchases, usage, and waste to ensure budget compliance.
- Food Safety & Sanitation:
- Enforce and uphold all food safety regulations, ensuring compliance with federal, state, and local health codes.
- Oversee the proper cleaning and sanitizing of kitchen equipment, food storage areas, and dining areas.
- Ensure that food is stored and prepared at the proper temperatures and that kitchen equipment is maintained in safe working condition.
- Meal Distribution:
- Oversee the accurate portioning and timely distribution of meals to inmates, ensuring that all dietary restrictions and special needs are met.
- Coordinate meal times and ensure efficient use of kitchen resources to serve meals in a timely manner.
- Documentation & Reporting:
- Maintain records related to food production, staffing, inventory, and food safety inspections.
- Report any issues regarding food quality, equipment malfunctions, or safety concerns to the appropriate authorities.
- Compliance and Safety:
- Ensure compliance with all health and safety regulations, including workplace safety standards for kitchen employees.
- Work with the facility management to address any issues related to food service operations.
