As Pastry Sous Chef, you’ll partner closely with the Executive Chef, guiding the pastry team, elevating technique, and ensuring every detail—from prep to presentation—reflects an unwavering commitment to quality.
About the Role
The Pastry Sous Chef must check and monitor that all of the set culinary standards and recipes are maintained. Must be solutions driven and have an interactive leadership style. Excellent food knowledge and a working understanding of every menu item are necessary to effectively train and develop the staff. Atlas Restaurant Group volume demands that every Pastry Sous Chef be involved in each shift so sound time management skills must be practiced to ensure successful management and follow thru on all responsibilities. All costs associated with the production of food must constantly be analyzed to ensure maximum productivity and profit. Every member of the management team is responsible for maintaining the quality standards set by Atlas Restaurant Group. The Pastry Sous Chef will take full responsibility for his or her outlet. Leading, teaching and disciplining employees, under the guidance of the Executive Pastry Chef.
The Requirements
As a Pastry Sous Chef, we would love you to have:
At least 2 years of related high-volume experience and 1 year of managerial experience
Check employee roster, make sure all stations are here and ready to go
Inventory and ordering for the following day
Maintains local health department food handler’s certification up to date and current
A passion for food, employee development, and exceptional work ethic
Enforcing proper sanitation practices
Prepare in accordance with quality, availability and seasonality and ensure market lists are completed on a daily and weekly basis
Strive for perfection in the outlet, 100 % Guest satisfaction
Assist and help coordinate all menu planning and implementation
Ensure food standards and presentation are maintained and always improved
Organize food production in a cost effective and hygienic manner
Training employees on formulas and systems
Planning production for coming days
Being an effective listener, before acting is essential. (Seek to understand)
Enforcing proper sanitation practices
Vast understanding of methodology for most pastry operations
Control food cost by maintaining food standards at reasonable cost through liaison with the Purchasing Department to check prices, market price fluctuation, quality, etc.
Able to perform in a team serving environment
Availability to work nights, weekends, and holidays – REQUIRED
Ability to stand during entire shift
Ability to stand for extended periods, and lift 40 lbs

Total Rewards
The base salary range for this role is $75,000-$85,000, aligned with your experience, leadership scope, and the impact you bring to the business.
