Job Summary
The Gutter is the process of removing the internal organs from the carcass. The gutters are responsible for the clean evisceration of cattle which includes removing the paunch and the pluck from the internal body cavity of the beef carcass.

Key Responsibilities:
- Remove exposed stomach by pulling bung and then pushing down on paunch; take care not to rupture the stomach.
- Remove stomach/intestines, liver, and pluck.
- Kosher cattle, rabbi tag is removed and put on lung.
- Rinse apron and hands.
- Steel knife, then place knife in sanitizer, remove second knife from sterilizer and begin procedure on next animal.
- Knives cannot be sterilized first and then sharpened due to cross contamination from steel.

Qualifications
Minimum Qualifications (Required):
- Must be 18 years of age or older.
- Must be able to work in the United States without sponsorship.
- Must be able to work in a humid, hot, wet, slippery, or moving surface at varied heights in and around moving equipment and parts with the use of personal protective equipment (PPE).
Preferred Qualifications:
- Previous experience/knowledge of manufacturing environment.
- Previous heavy machinery experience in manufacturing environment.
- Previous agriculture production/ beef plant experience.
Knowledge, Skills, and Abilities:
- Be attentive to detail.
- Ability to work safely, wear PPE, and follow instructions.
- Ability to attend work consistently.
- Always be aware of your surroundings.
- Follow all safety, food safety, and Sanitary dress procedures.
- Be attentive to detail.
- Able to stand for lengthy periods of time.
- Display strong work ethic.

Summary
America's Heartland Packing is set to open its doors in early 2025. The 775,000 sq. ft. greenfield project will include a harvest floor, carcass chillers, fabrication area, rendering, further processing area, storage coolers, freezers, and loading docks.
