Job Duties
General Responsibilities
- Assist with pre-operational inspections (backup support).
- Check, monitor, and record room temperatures in raw areas, blast freezer, and finished goods freezer.
- Perform scale calibration in raw areas (backup for pre-op).
- Conduct thermometer calibration (backup).
- Verify cleaning procedures in the beef room prior to startup.
- Ensure beef preparation procedures are followed, including temperature and formulation requirements.
- Collect daily lab samples for trimming and submit to the lab.
- Verify production processes, including injection recipes, meat sizes, and ingredients.
- Ensure all safety procedures and GMP (Good Manufacturing Practices) are followed.
Gyros Room Responsibilities
- Verify adherence to production schedules and processing procedures, including meats, formulation sheets, and ingredients.
- Provide production support when short-staffed (e.g., completing fat analyzer sheets).
- Record hourly temperatures of gyro cones.
- Perform batch verification (meat temperatures, lot codes, mixing time, and water amounts).
- Monitor and address batch deviations.
- Ensure compliance with special formulas and export requirements.
- Monitor condensation and enforce safety and GMP standards.
- Ensure proper meat rotation practices are followed.
- Verify correct use of rework materials.
- Manage Halal meat procedures, including tagging and holding products for export when required.
- Verify incoming materials and ingredients.
- Tag received meats and take temperatures when products are not in coolers.
- Send meat samples to the lab when no COA (Certificate of Analysis) is available or testing has not been completed.
- Maintain Halal certificates and COA documentation.
- Generate work orders to report machinery issues.
Packaging Room Responsibilities
- Follow the packaging schedule.
- Verify temperatures of gyro cones.
- Ensure correct products are packed per customer specifications.
- Monitor and track products designated for export.
- Inspect cones when discrepancies are identified.
- Perform daily IQF (Individually Quick Frozen) QC checks during production.
- Conduct daily checks in the hamburger room when in use.
- Complete all required documentation accurately.
- Perform pre-operational inspections for all raw production rooms.
- Monitor CCPs (Critical Control Points), including room temperatures.
- Maintain and update the hold log/book.
- Complete scale calibration forms after verification.
- Train new employees on procedures and compliance standards.
