GENERAL DESCRIPTION OF CLASS
The purpose of the class is to supervise inmate staff in the preparation and service of meals in
the Albemarle Charlottesville Regional Jail and in the maintenance of clean and sanitary kitchen
and dining areas; to assist with food preparation and service as necessary; to assist with
inventory management and other administrative functions as assigned, and to perform related
work as required. The class works within a general outline of work to be performed, and develops
work methods and sequences under general supervision.
ESSENTIAL TASKS
The tasks listed below are those that represent the majority of the time spent working in
this class. Management may assign additional tasks related to the type of work of the
class as necessary.
Supervises and participates in preparation and service of meals in the Albemarle Charlottesville
Regional Jail and in the maintenance of clean and sanitary kitchen and dining areas
Assumes responsibility for the complete operations of the kitchen in the absence of the Food
Services Director and Assistant Food Services Director;
Trains and supervises the work of inmates as assigned; maintains inmate work records.
Assists in maintaining the security and safety of the kitchen and dining areas, inmates and staff
through implementation of established policies and procedures.
Maintains documentation of all logs pertaining to the food services operations that are inspected
by the Department of Corrections, the Health Department, as well as the Fire Marshall.
Operates or supervises the operation of standard cooking equipment to include: ranges, mixers,
food choppers, meat slicer, dish washer, and refrigerators-freezers.
Verifies deliveries, inventories, and stocks food supplies. Maintains sanitary standards; conducts
monthly inventories.
Monitors and ensures proper personal hygiene of food service workers.
Supervises the set-up of serving lines.
Conducts a visual daily health screening of all inmate kitchen workers before each shift;
Maintains security of kitchen including a constant visual of all metal or sharp objects, all utensils
shown on the shadow board; maintains a log as well as a call in count, to the Security
Supervisors, of all knives and utensils.

Assists with the catering of meetings and events as required.
Prepares various records and reports with accuracy and completeness as required.
Performs general clerical / administrative work as required, including attending meetings, entering
and retrieving computer data, copying and filing documents, answering the telephone,
maintaining logs and lists, etc.

such as kitchen equipment and utensils, physical restraints, computers for data entry, fax
machines, copiers, telephones or similar equipment.
COGNITIVE REQUIREMENTS
REASONING REQUIREMENTS:
Requires performing supervisory work involving policy and guidelines, solving both people- and
work-related problems.
MATHEMATICAL REQUIREMENTS:
Requires using basic algebra involving variables and formulas and/or basic geometry involving
plane and solid figures, circumferences, areas and volumes, and/or computing discounts and
interest rates.
LANGUAGE REQUIREMENTS:
Requires reading technical instructions, procedures, manuals and charts to solve practical
problems; composing routine reports and specialized reports, forms and business letters with
proper format; speaking compound sentences using normal grammar and word form.
MENTAL REQUIREMENTS:
Requires doing clerical, manual or technical tasks prescribed by standard practices but which
may require computation, the use of several procedures, and the use of independent judgments
with obvious choices; requires normal attention for accurate results.

VOCATIONAL/EDUCATIONAL AND EXPERIENCE PREPARATION
VOCATIONAL/EDUCATIONAL PREPARATION:
Requires high school diploma, GED or specialized vocational training.
SPECIAL CERTIFICATIONS AND LICENSES:
Must possess a valid state driver’s license.
Must possess Serve-Safe Certification; may be required to possess other certification(s) as
deemed necessary by supervisor.
Must possess CPR and First Aid certifications.
EXPERIENCE REQUIREMENTS:
Requires one to two years of institutional food service experience for large quantities of meals.

Requires medium work that involves walking, standing, stooping, stretching or lifting all of the
time and also involves exerting between 20 and 50 pounds of force on a recurring basis, or

very close tolerances or limits of accuracy.
ENVIRONMENTAL HAZARDS:
The job may risk exposure to extreme heat and/or cold, disease/pathogens, violence, electrical
shock, toxic/caustic chemicals, kitchen hazards.
SENSORY REQUIREMENTS:
The job requires normal visual acuity and field of vision, hearing and speaking abilities, and color,
taste, texture and odor perception.
