Essential Job Functions
- Prepares, cooks, serves general/special diet meals for residents per physician & menu.
- Practices proper portion control according to prescribed diet.
- Ensures resident satisfaction regarding meals through quality, quantity, and presentation.
- Ensures portion control, consistency, and presentation meet facility standards.
- Adjusts recipes and ingredients as needed for resident preferences or dietary restrictions.
- Coordinates with care staff to meet resident meal needs and schedules.
- Ensures all safety procedures are followed regarding meal prep including following prescribed special diet orders for residents.
- Assigns daily tasks to kitchen staff and monitors performance.
- Trains and mentors new and existing kitchen staff in proper procedures, safety, and sanitation.
- Ensures staff compliance with facility policies and regulatory requirements.
- Tracks inventory levels, communicates ordering needs, and minimizes waste.
- Ensures proper food storage, labeling, and rotation (FIFO).
- Assists in cost control by monitoring usage and preventing waste.
- Oversees daily kitchen operations to maintain efficiency and quality.
- Maintains cleanliness and organization of kitchen, including food prep, storage, cooking areas.
- Monitors equipment functionality and reports or resolves issues promptly.
- Ensures all kitchen practices comply with Title 22, health department regulations, & policies.
- Maintains required logs (temperature, cleaning, and safety).
- Assists during inspections or audits and implement corrective actions as needed.
- Communicates resident feedback, likes/dislikes, and concerns to the team and management.
- Serves as point of contact in the absence of the Culinary Services Manager.
- Handles call-outs, absences, equipment issues, ingredient shortages.
- Makes informed decisions to ensure uninterrupted, high-quality meal service.
- Observes and practices all department safety and sanitation standards.
- Measures/mixes food ingredients per recipes; prepares all types of food according to production methods/regulatory requirements.
- Uses steam table to maintain meals at proper temperatures.
- Cleans cooking utensils, preparation equipment, kitchen areas per schedules/proper methods.
- Makes appropriate notations of food exchanges on daily menus.
Qualifications
- High school graduate or GED required.
- Two-four years’ recent experience as a cook; skilled nursing, assisted living or restaurant background preferred.
- Knowledge of breakfast, lunch and dinner entree preparation with knowledge of scratch soups, sauces/gravies, starches and vegetables preferred.
- Must obtain a food handler card within 30 days of hire date.
- Must be able to work with dementia residents, intervene safely and appropriately in challenging situations.
