We are a health-forward, organic BBQ food trailer specializing in intentional cooking and fire-based techniques. We believe food should support wellness and are seeking someone eager to learn the art and science of smoking meats—especially brisket—using traditional, wood-fired methods.
Position Summary
The Pit Master Apprentice works alongside our head Pit Master to learn every aspect of smoking meats, managing live fires, preparing proteins, and presenting food with excellence. This role also supports kitchen operations, expo, and customer service.
This is a unique opportunity for someone who loves BBQ, wants to master brisket smoking, and is ready to grow into a future leadership role.
Responsibilities
- Assist with fire management using wood, charcoal, and live flames
- Learn proper trimming, seasoning, and smoking techniques for brisket and other meats
- Cook, prep ingredients, and assemble plates during service
- Work in tight quarters while communicating effectively with the Pit Master and head chef
- Handle customer orders and payments
- Maintain trailer cleanliness and perform dishes, restocking, and inventory
- Follow food safety standards and ensure all equipment remains operational
Requirements
Strong interest in BBQ, fire cooking, and pit operations
- Experience with wood, fire, charcoal, or smokers preferred (not required if willing to learn)
- Passion for organic food, healthy eating, and understanding how food affects the body
- Calm under pressure in a high-demand environment
- Coachable, attentive, and open to constructive direction
- Professional appearance and strong people skills
- Ability to work long hours on your feet in varying weather conditions
- Reliable with consistent attendance
Schedule
- Thursday: 9:30 AM – 9:00 PM
- Friday & Saturday: 9:30 AM – 10:00 PM
- Sunday: 9:30 AM – 7:00 PM
Must be available for all required days.
Compensation & Growth
- Starting at $17/hour
