Knowledge, Skills, Abilities: Cook/Baker

Ability and experience with preparation of nutritional meals for 46 personnel according to daily planned menus. Ability to prepare a wide variety of quality meals accommodating common dietary restrictions under potentially adverse weather conditions. Skill in cooking and preparation of bakery products utilizing recipes, guidelines, instructions or equivalent. Ability to maintain inventories of food, equipment, and supplies, requisition items for the daily preparation of bakery products and served meals.

Ability and skill operating on-board galley equipment. Ability to ensure the clean, sanitary and safe condition of all galley spaces, food refrigerators, freezers, and food service-related equipment. Ability to maintain high standards of food safety and sanitation in compliance with CDC/FDA vessel sanitation requirements. Computer skills capable of creating documents and inventory spreadsheets. Strong interpersonal skills and ability to communicate effectively and positively with guests and crew. Ability to deliver outstanding customer service on a consistent basis.

U.S. Coast Guard's Navigation and Vessel Inspection Circular (NVIC) 04-08 requires mariners demonstrate agility, balance and physical fitness needed to work on board a vessel by successfully completing 13 different performance tests. Performing rounds and working in an active sea, work aloft, climb up and down steep and vertical ladders and enter and exit compartments through hatches, doors and sills up to two feet high. Participate in emergency drills and in launching boats and life rafts. Perform physical labor, climb, handle and lift weights and equipment over 50 lbs. Perform rounds at sea. Ability to work with others in close quarters under arduous weather conditions. Able to work a twelve-hour shift at sea. Able to work in arduous conditions.

Mess Attendant

Ability and skill operating onboard galley equipment. Ability to ensure the clean, sanitary and safe condition of all galley spaces, food refrigerators, freezers, and food service-related equipment. Physical strength and dexterity to manage heavy lifting of supplies and equipment in extreme conditions in enclosed areas (NVIC) 04-08.

Prefer two years of progressive work experience responsible aboard a marine vessel as a cook/baker, or equivalent training and experience. Computer proficiency in use of word-processing and inventory management. Must have good organizational skills, the ability to plan ahead, and understand the relationship of all galley functions to the overall morale of the vessel.

Mess Attendant

Prefer six months work experience aboard a marine vessel as a crew member, or equivalent training and experience. Computer proficiency in use of word-processing and inventory management. Must have good organizational skills, the ability to plan ahead, and understand the relationship of all galley functions to the overall morale of the vessel.

Required Experience & Education:

Cook/Baker

Degree from an accredited culinary school or, in the absence of a formal degree, equivalent combination of progressively responsible food and baking training and experience. Additional required credentials can be found below.

Mess Attendant

High School graduate or equivalent education in addition to the credentials listed below.

Salary Information:

Cook/Baker: This is a temporary position, grade 77. Including overtime and cruise leave cash out, starting pay averages about $350/day.

Mess Attendant: This is a temporary position, grade 76. Including overtime and cruise leave cash out, starting pay averages about $295/day.

Testing will be in accordance with the Department of Transportation Program and testing shall be in accordance with United States Coast Guard Drug and Alcohol Testing guidelines outlined in the Federal Register 46 C.F.R. 4, 5, and 16.
